Ingredients:
3/4 cup all purpose flour
2 Tbsp unsweetened cocoa powder
1 tsp baking powder
1/8 tsp salt
6 Tbsp granulated sugar
1/4 cup vegetable oil
2 Tbsp sour cream or plain Greek yogurt
1 egg
2 Tbsp milk
1/4 tsp vanilla extract
1/3 cup chocolate chi
Directions:
Preheat oven to 450 degrees F
In a medium size bowl combine dry ingredients - flour, cocoa powder, baking powder, salt.
In another bowl combine oil, sugar, sour cream, egg, milk and extract.
Pour wet ingrediernts into dry ingredients and mix until almost incorporated.
Add in chocolate chips and finish stirring so that all dry ingredients are absorbed.
Scoop batter into a lined or greased muffin tin. Will make four large muffins.
Bake at 450 degrees F for 5 minutes and then turn oven down to 350 degrees F and bake for an additional 8-9 minutes or until muffins are dry to the touch, bounce bake when touched and a toothpick comes out clean.
