Small Batch Molasses Caramel Cookies Imagine the smells of Christmas filling your kitchen and the anticipation it brings your senses. These molasses cookie have a crispy edge with a chewy, gooey, middle surprise. You’ll soon have 4 cookies to satisfy your new craving with this simple recipe. DRY: 1/2 cup + 2 Tbsps. all purpose flour 1/4 tsp. grd. cinnamon 1/4 tsp grd. ginger pinch nutmeg 1/8 tsp. salt 1/2 tsp. baking soda WET: 3 Tbsps. butter, salted, melted 1/4 cup + 2 Tbsps. dark brown sugar 1 Tbsp dark molasses 1 egg yolk 4 Kraft soft caramels COATING: extra sugar 1. Large bowl: Whisk together DRY ingreds. Transfer to waxed paper and set aside. 2. Same bowl: Cream WET ingreds. 3. Combine DRY into WET until just combined. 4. Cover dough in plastic wrap and chill for 30 mins. 5 Preheat oven 350°F and parchment lined a baking sheet. 6. Divide dough into 4 balls. 7. Conceal a caramel inside each ball, at the center, and re-roll into a ball. 8. Roll each ball in sugar to coat, and place on a prepared baking sheet. 9. Recently made Scottish shortbread adding chopped dried cranberries and pistachios to basic recipe. I make it by hand just squishing everything together. No need for an appliance when the butter is room temperature.

This recipe is exactly 💯 what I wanted to find and the ingredients and instructions seem so easy. Thinking about omitting the Almond Extract and adding finely ground Cashew Nuts into the dough for the nut flavor. Cashews go so good with Jam or Marmalade. Thinking I might make this later today! Perfect for a day like today when there's a strong chill in the air... Shortbread and a hot beverage of choice = pure comfy pleasure.

Buy small prime rib. Have butcher cut into 2 portion chunks. Cook. Slice. Freeze non cooked chunks for another day.

???/Suggestion: I would love to see more small batch main dishes and/or side dishes that you may have. My 86 year old mama has really begun to have trouble cooking for herself, and especially coming up with smaller quantities to cook since it is just her. I'm not sure how your mom feels about rice, but one-pot rice cooker meals are just prep, and hands-off for cooking. There's multi-cooker type rice cooker's that can saute too. They can pretty much do everything except pressure cook. I got a small Aroma rice multi cooker pro from Walmart that was around $40 a few years ago and make giant pancakes, rice meals, soup... It works for a lot of things. It might be easier for her. Best wishes and many you all have a good new year. ❤

A small 1.5qt or 2qt Slow Cooker (like a smaller Crock Pot) is most helpful. Many of them have the keep warm function and some have the Safety Shut-off features if her memory is not as good as it used to be during younger years years. Get one with the On/Off Light and the Warm, Low, High settings. There's a ton of recipes for them... again designed for smaller portions made especially for the smaller Slow Cookers. I'm in my mid 70s (age) and ❤❤❤ mine.

I like Harney & Sons Victorian London Fog tea-black & oolong teas with hints of vanilla, citrus and lavender. Sooooo delicious with steamed milk and a little sugar! I can’t wait to try this small batch shortbread!

Wow! Delicious. Made in air-fryer (bake setting), covered in foil and uncovered for last 10mins. Took longer to cook, about 25mins, but WOW!! The caramelization is insane and cake is so soft with a tender crumb. I also just used whole milk. This recipe is dangerous!

Thank You!! I've tried unsuccessfully to cut down Peanut Blossom recipe many times. Now I have one that's perfect for me. Being diabetic & loving the combo of milk chocolate and PB is hard to resist eating them all. But having only 6 is perfect since it'll quench the craving, but won't blow up blood sugar either. I have been binge watching and one of the aspects of your recipes that I like the best is that yours are from-scratch. You don’t use many processed or prepared foods, except in cases like this where you used frozen pie dough. No judgement. Keep up the good work, Leigh Anne!

@@LeighAnneWilkes I’m glad I found it, too! I promised you that I would make some of your recipes, and today I did. I made the pineapple upside down cakes. Delicious!! And I made cheesecakes. I have three 4” springform pans, which worked out perfectly for that recipe. They are chilling now, so I can’t say that I have tasted them yet, but the batter was yummy, so I’m sure they’ll taste great. Thank you so much for these small-batch recipes. It’s great to be able to make a small but full-flavored desert and not have massive leftovers to tempt me. (I have lost 95 pounds over the last few years, but I still like a little sweet now and then).
