Welcome back to Loaves and Dishes!! In today's video, we are going to be making Chocolate Muffins! I was OBSESSED with the videos of that olympian who was obsessed with the Chocolate muffins in the Olympic village. These cupcakes are inspired by the Olympic Cupcakes! Chocolate Muffin Recipe:
3/4 cup Milk
1/4 cup Water
2 tsp Instant Coffee
1/2 cup Cocoa Powder (Dutch Processed if you can find it!)
1/2 cup Semi Sweet Chocolate Chips
1 stick Butter (unsalted)
2 cups All Purpose Flour
1 tbs Baking Powder
1/4 tsp Salt
1/2 cup Packed Light Brown Sugar
1/2 cup White Sugar
1/4 cup Vegetable Oil
2 Eggs
1 tsp Vanilla Extract
1/3 cup Milk Chocolate Chips (for top)
1. Preheat oven to 375
2. In a pot simmer over medium-low heat, milk, water, and instant coffee. Once the mixture is warm add butter, cocoa powder, and semi-sweet chocolate chips. Heat until butter and chocolate is melted then remove from the heat. Set aside to cool for 5-10 minutes.
3. In a bowl, add flour, baking powder, salt, brown sugar, white sugar, eggs, oil, vanilla extract, and chocolate mixture. Mix until thoroughly combined.
4. Put the muffin mixture into a lined muffin pan. Bake at 375 for 20 minutes. If the muffins aren't set in the middle add 5 minutes to time and check again.
