I made some for my neighbors' little kids using this exact recipe but instead of chocolate drizzled on top, I drizzled a plain ol' powdered sugar-milk glaze (diagonally, just like in the recipe) then sprinkled the glaze (work quickly!) with colored sprinkles because it was for the kids, and I wanted them to look extra festive and fun. (They're pretty much McDonald's-and-pizza kind of kids. I am not sure either has ever had oats or coconut oil or real vanilla extract or anything similar, so the colorful sprinkles were kind of a bribe. And it worked! The kids loved them.)

Suggestions for next cookbook: taco seasoning and banana bread. I've found both on your site but not in your book. I have been making the oatmeal cups often. Have even added dried blueberries that plump up in the baking. Yumm
