As everybody else... I'm hooked with Chef John. I came in late to the blog, I just recently discovered it (if that is possible!), but, from then on, I watch him everyday! and I look for all of his past videos and I've download most of the ones I've found. I love to hear him talk and use all of those expressions that I am now familiar with... the ooold tapa tapa".. etc, etc.... I love him!! he makes me laugh and feel good. Thanks Chef John !!!

I just made this... as soon as I added the melted butter there was this delicious aroma and I knew it was going to be good... The process was so quick and easy and the finished pie was gooey and gorgeous and wonderful... thank you, Chef John!

My uncle made pecan pie for thanksgiving this year, His own recipe. Sweetened with only maple syrup and a touch of molasses, 8 egg yokes to hold it together. The BEST pecan pie I've ever tasted!

I baked this pie yesterday using your recipe for the home-made pie crust, and it turned out very well! You are a great instructor and inspiration! I thought about some changes, which would be to toast the pecans before adding them, use about 4tbsp (60 g) less sugar and add a pinch of salt to the filling. And maybe substitute the semi-sweet chocolate chips with extra-bittersweet. What do you think about that, Chef?

I like your alterations. The toasted pecans is spot on. That extra step brings out way more flavor, what's better than toasted nuts? You have a chefs mind, that's for certain.

Did you try these changes??! I have watched a few pecan pie recipes and no one has mentioned toasting the pecans, but I always find it best when I do -- was uncertain if it would cause any issues if I did! Perhaps I will only lightly toast them just in case.

@dwdcweb No, completely unnecessary here. That amount of hot butter will have NO effect on that sugar egg mixture if whisked in quickly. If it were pure eggs the butter were going into, then I would have demo'd that.

In Kentucky, this is a Derby Pie. My mom (who is from KY) makes this every year for Thanksgiving and Christmas. Probably my favorite pie!

I just made this pie chocolate-free (allergic) with: Homemade Gluten-Free Pie Crust; Fresh Farm Eggs; Dark Muscovado (dark brown sugar); Organic Raw Fine Sugar; Coconut Oil; Unsweetened Almond Milk; Alcohol-Free Vanilla Extract; and EXTRA Buttery Pecans! Ingredients: 1 9-inch pie shell 2 eggs 1 cup light brown sugar 1/4 cup white sugar 1/2 cup butter 1 tablespoon all-purpose flour (I didn't add in this recipe, but suggest you do. Add with the sugars.) 1 tablespoon milk 1 teaspoon vanilla extract 1/3 cup chocolate chips 1 1/2 cup chopped pecans

Yes, the gentle tappa-tappa, often works better than the harder variety of tappa-tappas. Applies to baking too.

Just doubled up the recipe and made two of these for the thanksgiving party tomorrow. They turned out perfect with marie calender's pie crust I bought. Can't wait to slice these bad boys up because they smelled so freaking good while they were cooking!
