Made this three times already. Doubled the recipe and used a 9 X 13 pan. Also glazed it twice. The second glaze was thicker and made cris-cross lines over the top!!! Best ever! People have asked me to make it for them and name my own price! Chef John, its the best!

I just finished eating my second piece...This is AMAZING! I used the spicier 3 tsp ginger and subbed water with lemon extract for the glaze. This recipe is a keeper! wonderful :)

This cake is SOOOOOOOOO DELICIOUS 😋😋 It's soooo soft and fluffy. I added honey instead of molasses and no sugar at all because just honey is sweet enough for me. I candied some ginger and added that in as well. It's so so so tender and has a beautiful mild ginger flavour. Thank you so much for this recipe. 💓

My grandmother made gingerbread and served it room temperature with warm lemon glaze drizzled over the top...something about the warm lemon glaze that made it extra special.

Chef Jonh,.. i made it few days ago.i changed the molasses with honey. and i taste sooooo sooooo soooo good. The glaze combine soo well with the cake. @cavepieboy People used to use butter. We tend to put oil in cake now, though, because it creates a more tender texture, since oil is liquid at room temp (i.e., the temp you serve the cake at) while butter is solid. Also, since butter has a little water but oil has none, oil further encourages tenderness by reducing gluten production in the flour. Small but important differences.

@elarhy Molasses is what you get from boiling down the juice from sugar cane, but before the sugar itself crystallizes out. It ranges from 35%-50% sugar, while honey is over 80% sugar. Because of that, I'd think a 1-to-1 conversion would make the cake too sweet. If I were making this with honey rather than molasses, I'd replace the 1/2 cup molasses with 1/4 cup of honey and 1/4 cup of water or other tasty liquid. (Of course, I haven't tried, so not sure if that works perfectly. Experiment!)

My mom used to make gingerbread cake with lemon sauce, but the sauce was egg yolks and lemon and lemon zest, butter and sugar cooked until thickened. Mmmm

This looks a lot like my Nan's ginger cake. I would have added some simple whipped cream on top rather than the glaze, but it still looks yummy. One of my all-time favourite desserts!

My super secret to using molasses is..... Put in your oil first. Use the same measure for your molasses. The thin oil residue makes the molasses slip right out of the measuring cup. TADA. :-D

In reference to the pants - i thought you wanted brown pants, but in England where I am from, pants mean underpants not trousers. Brown pants is NOT a good look in the English sense. Great recipe and I am glad you are getting more desserts on the channel!

Hi, I know this video is from a long time ago, but can you explain why you don't mix the wet ingredients together before adding them? Is overmixing not an issue with this cake? Looks incredibly delicious, planning to make it.

@foodwishes also warming it up a little will help, but i dont know if that would affect how it would fold in? of course you added boiling water, so I doubt it makes much of a difference for this dessert.

got a question....this sounds perfect...but... I was thinking of making it in a special shape. I have these small doughnut hole pan or even these small snowflake shapes...do you think this would work? How would that effect how much to fill them, and how long to cook?

Fill them halfway. Grease the pan. And stick a toothpick into the cake if it comes out clean it's cooked
