Ingredients
1/2 cup of unsalted butter
50 grams of dark chocolate
50 grams of semi sweet chocolate
1 cup of all purpose flour / Maida
1/4th cup of cocoa powder
1/4th tsp of baking powder
1/2 tsp of salt
2 eggs
3/4th cup of brown sugar
1/4th cup of granulated sugar
1 and 1/2 tbsp of rum
1/4th tsp of rum essence
Take a pan and add 1 cup of water. Let it boil on low flame. Place a heatproof bowl and add 1/2 cup of unsalted butter and evenly divided portion of chopped 50 grams of dark chocolate and chopped 50 grams of semi sweet chocolate. Mix all of it really well until all of it has melted. Then keep it aside for 10 minutes to cool down.
Take a bowl and add 1 cup of all purpose flour / Maida, 1/4th cup of cocoa powder, 1/4th tsp of baking powder & 1/2 tsp of salt. Mix all of it really well and then keep it aside.
Then take another bowl and add 2 eggs. 3/4th cup of brown sugar, 1/4th cup of granulated sugar. Beat this with a handheld mixer for 4 to 5 minutes. After 5 minutes, add the chocolate mixture and along with that 1 and 1/2 tbsp of rum and 1/4th tsp of rum essence (Optional). Mix it for another 1 minute. Then add the flour mixture to it and gently fold the flour with the rest of the ingredients and then transfer it to a baking tray.
Take a baking tray lined with parchment paper and divide the cookie dough. Sprinkle chocolate chips or chopped chocolate on top of it. Place it in a preheated oven and bake it of 10 minutes at 180 Degree Celsius.
