The accurate spelling is "mendiant", which means "beggar" in french. It's a traditional christmas sweet, and each type of nut and fruit represents a religious order of the middle ages that only relied on charity & donations to survive, hence the name "beggar". It's really tasty and addicting & it's so nice to see all the ones you made! They look extremely pretty.

I assume the pink chocolate is dyed white chocolate(similar to the blue chocolate), however I'm not certain. Meanwhile, ruby chocolate is a chocolate that's naturally pink and tastes somewhat like berries rather than the usual chocolate taste. It was invented very recently in chocolate terms.
