Looks yummy! Will try this soon A smart hack to make fried onions, Microwave it for 3 minutes after slicing them fine. Which is usually the time it takes for the oil to heat....saves a good amount of time for making "Bista" (aka fried onions). A pinch of salt also helps with the make it crispy ps : if you overdo the microwave, onions can turn mushy, but i seen 3 to 3.5 minutes is just the right time to get onions warm and starting to steam.

I love your recipes! I have to say, though, that the medium to small sized whole spices concern me, because I’m feeding two young grandkids (who also love your recipes!), and they don’t always pay attention before biting! So I usually use ground star anise and cardamom.

Hi Chetna! Lovely recipe 😊 I usually add the chopped cilantro when I fry the onions for layering. Just when the onions are almost golden. That way, when I steam the biryani it keeps the bright green color. 🥰

Did this tonight, chetna and went down really well with the vegetarians in my family. I didn’t use the silver foil or bread but relied on my heavy le crueset lid to seal and it seemed to do the trick! On another matter my Indian-born mum when making biryani used to fry the uncooked rice in a little oil with the onions before making the curry in the same pot; once the meat /veggies were cooked she would then add boiling water to a thumbnail height (her thumbnail) above the contents. She would put in a very slow oven until the rice had absorbed all the flavoured curry water. Do you have any comments on this style of cooking this rice dish? I suppose it produces a more intense taste

4:50 but you did add chat masala which will have salt ... remember you said sour note after that? ... i am able to buy two three different varieties of chat masalas one by mdh and two by shan one of which is called fruit chat masala and all three are salty (may be a little sour)

I do not recall ever seeing bread dough used to seal the space between a pot and its lid (and the foil, too, in this case). I was trying to think of of what else one might use, and came up with kuch nahin. Very interesting and Shubh Diwali to you.

I wonder if you could try to recreate something I saw here on KZbin. On the channel fung brothers they did a video on fusion food in New York city, and they went to an Indochinese restaurant and had a bok Choi pakora with chutney, pomegranate, and rose petals that looked divine. Do you know a way to cook chickpeas without onions or garlic? Since having the Omicron COVID, I have terrible reactions to both of those. I can’t even be in the same room when they are cooking! I’ve been following you for two years, and have loved your tandoori chicken, Tikka Masala, Chana masala, and moong dal. Now none of it works for me. Sigh. If you can help, please post a recipe! Yep, as you were serving it up, exactly what I figured would happen, happened and I KNOW *I* won't be taking the time to mold it into such a nice 'stack' - I will be making this, but I will just be mixing the ingredients when they are ready.
