actually i prefer beijing hotpot. i feel chongqing food doesnt keep the original taste of the material because they ususally put too much oil and seasoning.

Had hotpot when I went to Chongqing 12 years ago. Love the peppercorns, haha. Now Sichuan cuisine is everywhere here in Melbourne, including spicy hotpot.

my mother in law told me 30 yrs ago, she visited Chongqing and ate the hotpot in a very diff style. a large hotpot been seperated by metal grids, and each one just dipped from one of the grids(they are basically strangers), so from the mordern sanitation point of view, it was not so clean in the sense. But she remembered the great experience for 30 years.

One reason why the hot pot in Chongqing is so popular is the climate. In summer Chongqing is not only hot, but extremely humid. I was there several times and on one occasion I felt I was in a steamer. What happened next was my girlfriend brought me to a hotpot shop and the chili and peppercorn made me sweat like hell after the meal. Miraculously when I walked out to the street again, I felt kind of cool. The stuffiness was all gone. You would love Chongqing hotpot in Chongqing, if not elsewhere.

I like your videos, basically I watched them all. Short but straight to the point! By the way, Chong Qing is basin structure, we call it mountain city, it’s all circled by mountains, so its climate is very humidity. That’s why Chong Qing people likes to eat spicy numb hot pot to remove the humidity in their bodies. Glad you are in love with China. 谢谢你爱中国!谢谢你分享!加油!

Another reason that why Chongqing people like hotpot very much is that, due to the geographic location of Chongqing, which is surrounded by a lot of mountains and rivers, the climate is very humid. People need hot and spicy food to release much sweat to feel better. Personally I come from a rather dry place in the north and my body did not feel good when I firstly arrived there, and I even had some allergic reactions on my skin. But once I started to eat hotpot and other spicy food as local Chongqing people do, I felt much better.

Interestingly, as a converse to Chongqing, you'll find cuisine of Southern China especially Guangzhou region (Hong Kong etc) has very mild flavours because they generally had better access to fresh produce, by virtue of the tropical climate.

@@BlondieinChina I don't think the cow stomach is raw, its already pre cooked/steamed, just only need to warm it and let the spicy soup flavor it, thats why 8 seconds were enough.

I had an opportunity a few years ago trying a style of Sichuan hotpot and it is called clear soup hotpot. God !! It was as hot as anything I have tried. The soup base had no dry chilli, no visible chilli seeds, no peppercorn, not a trace of chilli oil.

would love to find out all the ingredients in that soup. once i bought a jar of chinese mushroom pickle type. it was super delicious but too strong for my already strong indian taste !! yknow how spicy indian food is. anyway, i wrote to the manufacturer and told him to make it less strong ..but he wrote back saying it was good as it is 😊

@NoPain NoGain For now it's not too hot nor too cold. But never expect to experience this type of weather here in summer(like June to September), the temperature will go up to 40 degrees celsius on some extremely hot days and make you feel like you're being burnt...... but it's fine cuz they have AC everywhere, just take your sunscreen and it'll be alright. XD

omg vegetarians can DEFINITELY enjoy hotpot. I should have showed a menu, because there are so many delicious vegetable options: mushrooms of all shapes and sizes, leafy greens, potato, yams, etc... as well as so many noodle and tofu options! Between you and me, I actually prefer to order vego when I do hotpot haha

@@simranchawla6 I guess the only thing you'd have to be worried about is the soup that might have traces of meat from other people who are dipping meat into it. But you can always get the hotpot that is split down the middle! Happy hotpot eating to you!

Simran Chawla One of the reasons why hot pot is great is because any food can be put into hot pot. We also have special vegetarian soup base. As for vegetarians coming to China, there is no need to worry about food at all, because China has more than 1000 years of experience in vegetarianism. It is highly recommended to try vegetarian restaurants. They can even make tofu taste like meat.

In the West, we really have largely stopped eating offal, except perhaps some liver dishes. My mother told me horror stories of being forced to eat tripe as a child and it made me very hesitant to try it... However, it seems like offal is still a big part of Chinese cuisine!
For maodu(stomach),u should remember the word 七上八下.So one sec in hot pot and the next sec out.After 8 times u can taste a tender and well-cooked maodu.

The proper term for it is not "stomach" but "tripe" even though it forms part of the stomach of the cow. Just like fish "maw" is often referred to as fish "stomach" but it's actual the swim bladder. Enjoy watching your enthusiasm for new experiences, keep it up.

Indulge in the food there, but it is best not to eat too much, eating a lot of these spices is more harmful to the stomach. The winter climate in Sichuan Province is relatively humid and cold, so local people will eat hot pot to sweat and detoxify.
