Ah, this explains why my crispy intestines at a Hunanese restaurant in Phoenix, USA, was literally blistered in little red devils when I'd asked for "fairly mild." They had the sour element right, too. Not, I'm afraid, my thing, but it was well done and obviously authentic, so far from the home of the cuisine. Still glad I tried it. Well explained, Peter!

So neat to see Changsha! My grandmother was born there about 100 years ago-her parents were white Americans, but there for a few years on medical-related work. I’ve heard stories of it at that time, but don’t know much about it now, so seeing the cuisine and the street scenes is a real treat. Thank you!
