acctually in red dead there is a way to get out the map; not sure if its been patched or not but i know if you get pissed drunk in one of the caves till you pass out, when you come to after the black out you spawn ontop of the mountain on the edge of the map and you can run off into the background where you can see they've tested terrains and textures

You should look at the digital physics argument. LIke a 3d software everywhere around you has 3d shapes and they move and react.. but when you move away from that area, it dissapears and stores itself in 2 dimentional code. Same thing with the universe, we have a 3 dimentional world where things collide and react, but its really a code... a big complex code.. and through that it creates this simulation, and the programmer is God himself :) its really interesting and i love this kind of stuff.
