Julia was an absolute genius at introducing gourmet cuisine to regular people; normal ingredients that made a wonderful meal is what she was great at.

How many TV or celebrity Chefs today ever are shown cleaning as they go? All Chefs and home cooks alike have to know and practice this skill but Julia is the only one who ever taught it in a cooking show.

Celebrity chefs are not teachers, they are entertainers.I can almost guarantee that you will have a bad experience if you use a recipe of a celebrity chef. At least, this has been my experience so I’ve stopped doing that.

All the good ones. The real ones. Watch Jacques Pepin or Rick Bayless. They are meticulous in their constant cleaning. In the early days of Food Network when it was about food, Emeril was constantly cleaning while cracking his jokes and clowning around. Hell, even Rachael Ray , love her or hate her, always used her 'garbage bowl' and cleaned her surfaces.

@@trees1trees I love all these folks and I've made many many of their recipes! Hell I lived in NOLA when Emeril was still at Commander's. I also was there when he was having 'allergies' in his nose. The Brennans were able to see past his 'allergies' and I'll tell y'all what: I ate at Emeril's two times. The second time I was lucky enough to get a stool at the Chef's Table which was really more of a bar - anyway let's just say it was amazing. I also got to meet Jacques Pepin because my mom volunteered for American Public Television. Well... It was in 1979 when I was still a very young boy but I have a picture with Jacques, my mom, and myself. Look as far as so many others they'll keep going on and inspiring us. There'll be folks that inspire us. There'll be folks that give us knowledge as to how we can better ourselves as home chefs or cooks. I was raised on Julia Child, Jacques Pepin and Justin Wilson being in PBS. I was also raised by my folks So we're you!

OK, does anyone think that s/he could do all that in 30 minutes? Really, do you? I was happy to see her use canned consume but even so, she was moving around that kitchen pretty quick and breathless at the end. Looked delicious, though.

In all fairness, this series was shot and released in the midst of the Cold War. Perhaps there were some seasonings that were not as easily traded because of that.

But she did say she was "shaping them" aesthetically . She didn't peel them first because she planned on shaping them but if you weren't going to do that - sure yes. I'd leave the skin on personally.
