I miss those days when you could buy calf's liver and roasts at your local market. So tasty! That helped make Julia Child's recipes accessible for her watchers. Thanks for the video.

I noticed she talked about truffles after their price:’’ You don't have to use these, but we are going to make a Pâté in a real manner, with no adaptations. lt gonna taste just like a French pâté...and so, you take your truffles out of the can.’’ How strong American women she is😌❤

It’s fun to watch these episodes a year before I was born and yet followed Julia through the years. Thanks for making these available. The influence over generations 🙂 I think hello Vietnam vs. the French Chef 😭

1965, probably close. Her food is awesome. Is Hello Vietnam a good food show? I don't know it.

@@philliphayden2727 The French Chef was a generational culture curiosity, we go from depression cooking to Julia showing us knives and the way the ‘French’ cook, the same who occupied Vietnam for a time, perhaps not Julia’s French. Its a cultural oddity to say the least looking back, pretentious, a monolithic France, as a armchair anthropologist it was a comedy with a middle class struggling to acquire the tools and skill to make this ‘French’ food. 1963 was that milestone of civil rights, middle class had to learn to actually cook 🙄😉 and why not learn some colonial cooking and culture ROTFL.

Unmolding the pate reminds me of getting a solid food out of a rectangular tin can, like Spam or corned beef. I love the idea of a pate from chicken livers.

I love watching these episodes and remembering a time gone bye. They were wonderful viewing throughout the years and even more so now. Do you episodes of her next show, Julia Child and Company? My family would religiously watch them together while I was in high school.

It would be interesting to know of how many Moms and Dads actually tried cooking the French way with Julia when they were cooking for their families? My mom watched the programs and never attempted the style or dishes that she viewed. We were living on Welfare and Food Stamps.

We’re truffles much cheaper then. Even canned truffles today would be probably more expensive than buying a whole slab of pate from the deli.

Truffles are amazing but their flavor is very subtle. I’m not sure you’d even be able to detect them in a dish like this. I’d save my money and eat truffles with pasta or risotto where you can really appreciate them.

@@jessrow1275 most truffle oil these days doesn’t even contain truffle but synthetic rubbish. I wonder if it’s the same as lobster. Seen as peasant food but now very high end. I know my mother didn’t buy fish that we now eat and pay bizarrely a very high price tags for today.

When she unmolded that pate it reminded me of a big chunk of spam, especially with all that "lovely jelly" as Julia put it.......

“Never eat raw pork” ……proceeds to touch raw pork with hands and taste cooked pork from the same hand. Lol. This lady was made of iron. Love her!

Unsure of what they used in the studio, but all of her appliances in her home were Thermador.

Downside, she hardly ever cleaned her hands during this single take era of her TV career. She handles raw meat, then grabs hsr pans and tools and sticks her fingers in the all spice too.

I make chicken liver pâté for the holidays every year. Usually once for Thanksgiving and again at Christmas or New Years. It is my absolute favorite!

Actually there is a raw minced pork dish in Germany called Mettbrötchen. Its a breadroll cut into halves and the meat is spread on them. Its delicious!

@@jody024 USA pork you couldn't do that with, but it in the last 30 years, pigs diet here has changed and you likely could do it but, most won't
