本期视频跟大家分享一款外皮香甜酥脆,内馅细腻顺滑像冰淇淋一般口感的酥皮泡芙。泡芙糊部分的制作要注意面团的炒制要充分,这样才能让面粉充分糊化吸收足够的鸡蛋液。最好能用不锈钢小奶锅制作,能够更好地观察状态。泡芙糊在加鸡蛋液的时候一定不要全部加进去,配方中的鸡蛋可能会有剩余,要根据视频中讲的状态来判断。泡芙内馅我用了香草卡仕达奶油馅,口感细腻顺滑,像冰淇淋一般。当然你也可以制作更简单的奶油加糖(8-10%左右)打发,不过口感没有卡仕达酱清爽。泡芙内馅可以提前做好,不过我通常会等泡芙制作成功后再开始制作内馅,更加保险。打馅的泡芙要尽快食用,不然泡芙皮会吸收内馅的水分时间长会变不脆。可以将泡芙皮单独密封室温保存,准备吃的时候180°C烤3-5分钟,即可恢复酥脆,食用前再填入馅料,可以保持口感。

食谱(可制作12-14个):
酥皮部分:
软化的无盐黄油 45g
糖粉 30g
低筋面粉 50g
泡芙面糊部分:
牛奶 85g
无盐黄油 40g
白砂糖 5g
盐 1g
低筋面粉 55g, 也可用中筋面粉代替。
鸡蛋 约2个,带壳每个60g。要根据状态添加,不一定全部用完。
香草卡仕达奶油馅:
蛋黄 2个
牛奶 280g
糖 40g,可按个人口味适当增减
玉米淀粉 15g
香草荚 1/2个或香草精3滴
无盐黄油 10g
淡奶油 175g
💡 烤制:190°C先烤15分钟快速膨胀,转175°C烤10分钟定型上色,转150°C烤10-13分钟烤干内部。
💡 烤盘垫烘焙纸不要垫硅胶垫,硅胶垫容易导致底部受热不足而凹底。
💡 如果烤箱可以单独控制上下火,可将底火调低10°C,防止底部颜色过深。如果不能单独调节,可以把泡芙放在偏上的烤架,离底火远一点。
💡 具体的烤制时间和温度可能还要根据自己烤箱自己摸索,每个烤箱都有自己的脾气。
Recipe(Makes 12-14):
Crust:
Softened Unsalted Butter 45g
Powdered Sugar 30g
Cake Flour 50g
Choux Pastry:
Milk 85g
Unsalted Butter 40g
Sugar 5g
Salt 1g
Cake Flour 55g, can be substituted with all purpose flour
2 Eggs, 60g ea. with shell, you may need extra or less than this.
Vanilla Custard Cream Filling:
2 Egg Yolks
Milk 280g
Sugar 40g, adjust the sugar to your taste
Corn Starch 15g
1/2 Vanilla Pod or 3 drops of vanilla extract
Unsalted Butter 10g
Whipping Cream/Heavy Cream 175g
💡 Bake at 375°F/190°C for 15 minutes first, then 350°F/175°C for 10 minutes, then 300°F/150°C for 10-13 minutes.
💡 Use parchment paper instead of silicone mat.
💡 Reduce the bottom heat by 18°F/10°C if the bottom and top heat can be set separately to prevent the bottom from burning. If not, place the baking sheet on a rack that is further from the bottom heating element.
💡 You may need to adjust the baking temperature and time according to your own oven.
