I always make a huge meatloaf; one meal while it's hot then chill it overnight, slice it and freeze two chunky slices per bags. Great freezer staple. Can fry it from frozen

I made a carnivore meatloaf while doing only ground beef/bison, eggs and butter using 1 lbs each ground beef and ground bison, 2 eggs and Redmond Hickory Smoked Salt. After seeing it was not going to stay together I remembered I had some Carnivore Crisp beef flour and added about 1/4 cup of it. It turned out great! This looks great, would never have thought of putting the meat in the food processor, have always just mixed by hand. Still need to try your gravies.

I modify the Diet Doctor meatloaf, meatloaf but wrapped in bacon and the fat that runs out turned into tasty tasty sauce. I might try blitzing the mince (ground meat in the US) as it can tend to be a bit crumbly.

The very best meatloaf recipe I've ever had (and everyone who has tried it that I know of agrees its the best meatloaf period) was by George Stella from his cooking show Low Carb and Lovin It. What made it special is he would form the hamburger part in a square on the parchment paper, then add a layer of prosciutto ham slices, then a layer of provolone cheese slices, then roll it up like a fruit roll-up and bake it in a normal loaf pan. I'm sure that part can be adapted to any meat loaf recipe, I highly recommend giving it a try.

OK this was hands-down, the best meatloaf recipe! It was delicious! I have never made a meatloaf without eggs and I love the fact that this doesn’t have eggs and has ricotta cheese instead and blending it together in the food processor . You know Chris you....yes YOU, got me hooked on ricotta cheese! 😂😂 I cannot remember which video, but you used ricotta instead of cottage cheese? I bought ricotta since hubby doesn't like cottage. I now sit eating tiny little spoonfuls of ricotta sometimes 😂😅 I had never had it by itself. Mmmmmmm❤ Anyways, I am so making my meatloaf like this next time, minus the garlic powder, another no for hubby. And the gravy looks so good! I can already anticipate how many spoons of ricotta won't make it to the processor, lol. Bonus-- my processor is small. Hubby asked if I needed a bigger one, I said no. Well..... Well... you did it again. I followed the recipe as written except that I added a pound and a half of some brats that were way too salty and, of course, decreased the salt called for in the recipe. OMG... it is so good. Perfect texture, stayed together even without added eggs (something I didn't think was possible) and the taste was excellent. Thx. You are my go to recipe guy and I've made a few things of yours. I haven't gotten up the courage to make the carnivore refried beans... but that may happen. LOL.

Lol The ricotta being mixed into the fat basically takes the place of the panade so good call on expecting that to happen, though I’m achieving it in a different way. I made my own hoagie bun pans using the sm loaf pans from dollar tree, cut the ends on one siide slid the two end together got 8" took tim foil strips to connet them and a metal paper for extra hold finished with the parchment paper they came out beatiful!!❤

A Vitamix will try to liquify it and you'd only be able to do about a meatball size at a time. Just mix it in a bowl using your hands if you don't have a food processor and like it that dense. You could also mix it in a stand mixer with the paddle.

I agree with Patricia that a vitamix will probably try too much to liquefy everything. I think you’ll get a much better result mixing by hand or with a stand mixer. Just mix it a lot to break it down as best you can.

Hey there! Yes I think cottage cheese will work, but it can be drier so you’ll probably need another 1/2 cup of it and you’ll want to be sure you don’t overcook the meatloaf as it can get dry and dense quicker with cottage cheese.

Thanks for letting me know. I usually use gluten free beef or chicken loose bouillon & mix with hot water. I found it’s less storage & it saves money. I recently purchased Beef Collagen powder from Bulk Supplements & been adding it to recipes.

I use the powder from time to time as well. It’s a good product for convenience and can be very useful sometimes if you’re okay with the ingredients. 😊 Beef collagen powder is a great addition to things for extra collagen. 👍🏼😊

Hi Chris, I'm going to try your recipe and I'm hoping, I'm really hoping that you save me on this carnivore diet that I've been on for almost a month, because I've made carnivore crack, and it tastes just like butter, and I just made carnivore brownies last night and they were spot on or what they were supposed to look like, unfortunately my garbage disposal ate them. I love meatloaf, and I'll give it a whirl. I have a food processor, but I think mine is too small, and thank you for your videos.

I'm a bit surprised by this one as well. I was fully expecting eggs or egg white powder to be involved; I never saw the ricotta cheese coming! I'm terrible at taking notes so I'm glad about your recipe cards. Also, I finally tried your velveting technique, once with chicken and another time with beef. The chicken came out great, no issues. The beef I had some trouble with. I mixed the beef and egg white very well but when I cooked it I got a lot of egg whites cooking up that I had to peel off the beef...

Yeah this is a fun one that gives a great final product. For the beef velveting it is possible there was not enough heat in the pan. You can also skip the egg white if you like and just do the seasonings and baking soda and gelatin but you won’t get the crispy outer layer quite as well without the bit of egg white to hold the baking soda and gelatin. Another approach is to use just baking soda and water and then use fresh water to rinse that off afterwards and then add seasonings and gelatin right before cooking and not use the egg whites at all. All approaches give a bit different of a finished product but you may prefer one over the other.

Hi Chris and Ash, great recipe! Is there a substition for the Ricotta? I'm doing pure carnivore, only meat but would like to add something that doesn't have carbs that might make it creamy. Also, (no judgment) but Ricotta is prounounced Ree-Goat-Ahh. Full blooded Italian here.😊😊💜💜

Hey there. If you’re looking for something creamy dairy is your only option here unfortunately. Proteins from meat and eggs all set firm when cooked, so I’m not sure how to sub anything out for it.

Haha yes indeed. So for cottage cheese that will work, but it’s drier so it will end up a little bit firmer. You probably need to use another 1/2 cup of it and you’ll want to be careful not to overcook past 145 even as much as I did as it will dry out much easier.

When you make bone broth you can cook reduce it down by cooking and evaporating water to make it stronger so it’s more beef concentrate and less water. If you buy broth you can do the same but it can get pretty salty. Either way using a more concentrated broth that isn’t watery gives this much more flavor. 👍🏼

Thanks! Similar to your burger recipe, but ricotta this time. I used to make meatloaf with bread crumbs - that I ground in food pro myself - and egg and some milk - alas, no more. Have tried making meatloaf similar to my old way subbing pork rind dust for the bread crumbs - honestly, I think pork rinds often add little (maybe nothing, except expense) - specially in this case. Have you tried adding an egg or 2 to carnivore meatloaf? Does it end up too soft for you? I think in the old method, egg and bread crumb bake together with a soft-but-firm texture component. I don't think egg and pork rinds do the same thing. We got yard birds, so if I can add egg to something, I try to - gotta find ways to use all them eggs! But if it's not as good - well pls let me know what you've encountered. Thx

Hey there! Yes similar in process to the burgers for sure. So the bread crumb technique requires the egg becomes bread crumbs will cause the loaf to get crumbly and dense and the egg proteins bind it and help it puff a bit. In a carnivore meatloaf this actually doesn’t do the same thing because the eggs have nothing to grab on to (i.e. bread crumbs) and I find it actually ruins the texture by making it harder and more dense when baked. The meat proteins being emulsified with the ricotta will bind all on their own and the steaming from the ricotta and melting of emulsified fats are what create the soft texture. Adding an egg ruins that reaction in my experience. 👍🏼

Haha fair enough. 😊 I’ve used some pork rind flour is some recipes but I personally find I don’t care for the texture in many applications, and it can also have a strong pork flavor sometimes. Some things it works really well for but others not so much. I don’t find it works as easily and universally as bread crumbs and many times the application is much different.

Thanks! Depends on how much you eat and what brand of ricotta and cream you buy. Always best to use a macro tracker to calculate for your own recipe and serving size. If you want to track macros it’s a dangerous game to trust someone else’s calculations. The carbs in this are the trace amounts in the dairy and whatever seasonings you choose to use.

You can but it can be drier so I’d recommend another 1/2 cup and making sure not to overcook the meatloaf so it doesn’t become too dense and dry.

Today, I took a couple of thin slices of this meatloaf, took the chill out of in the microwave for 12 seconds and then made a “sandwich” with it. Put cream cheese, liverwurst and a little mustard on it. It was delicious!
