Once a buffalo starts to hoof it, it's gone. Buffalo are more than twice as fast as humans, and have endurance beyond imagination. Once they start running, they're gone.

That's a sword that cuts both ways. Buffalo delete about as many people in Africa every year as lions, people who were doing nothing more than fetching water or tending their crops or goats. The buff that doesn't run away is the one you really want, he's the dangerous one. Most of them understand they're prey animals and run away at the slightest hint of danger. But there's always that 1 or 2% who didn't get the memo that they're prey animals and believe themselves to be predators, and act like it. I prefer stalking in to within 30 or 40 yards, knowing full well I won't get to pull the bang switch more than twice if he (or she, cows are tough and dangerous, too) decides to charge. It's nothing at all like walking into a pasture and putting down a rogue Hereford, though it may appear to be that way in a video like this one.
