I believe that in all the musical and film adaptations the reason she is a brunette is because the Andrew Lloyd Webber musical the most successful adaptation aside from the book, he actually wrote around his muse at the time which was Sarah Brightman who had is very beautiful long wavy raven hair.

Christine has long curly brown hair in the adaptations because those are leaning on the Christine from the musical. Andrew Loyd Webber wrote the role of "his" Christine for his back-then wife Sarah Brightman ;-)
