Christmas Brunch with the Ladies! A great Breakfast Casserole!

Hashbrown Breakfast Casserole: Ingredients 2 pounds pork sausage 12 large eggs 1 cup sour cream, (light, regular or substitute Greek yogurt) 1/4 cup milk 1/2 teaspoons ground black pepper 20 oz bag frozen shredded hash browns, thawed 4 green onions 1/2 red bell pepper, diced 1/2 red bell pepper, diced 2 cups shredded cheddar cheese Instructions: 1. Combine the eggs, sour cream, milk, cheese, and salt and pepper in a large bowl. 2. Heat a large skillet over medium heat, add sausage and cook until browned, breaking it into small pieces with a wooden spoon as it cooks. Drain most of the grease and add the sausage to the bowl with the egg mixture. 3. Add the bell peppers and onion to the same skillet the sausage was cooked in and saute" for 2-3 minutes. Add to the bowl with the egg mixture and stir everything to combine. 4. Pour mixture into greased 9x13 pan. Cover dish and refrigerate overnight or bake immediately t 350 degrees for 40-50 minutes or until edges are set and the center is just barely jiggly. You can make this ahead of time and keep in refrigerator for up to 2 days before baking.

Crecent rolls 2 (8 oz.) pkg. cream cheese, softened 1 cup granulated sugar 1 egg, separated ground nuts, optional Lay 1 package Crecent rolls flat in bottom of lightly greased 9x13 inch pan. Press perforations together to close. Beat cream cheese, sugar and egg yolk. Place the mixture on top of Crecent rolls. Lay second package of rolls on top. Beat egg white; place on top and sprinkle with nuts, Bake at 350 for 35 minutes.

Your home is decorated beautifully plus you had everything ready in advance so that you could enjoy your ladies and Mr. Bill. Millie is adorable! I’m interested in hearing about the music and video on your t.v. screen…….is it something from KZbin? It really brightens the room along with the fireplace. You’ll have to tell your husband that my great-grandfather who emigrated from the French part of Canada, served in the Civil War for the North from St. Paul, Minn. and spent 1864 in Tennessee. I use my maiden name which is the same as his and can be traced to Normandy, France in the 1600’s. Have a wonderful weekend!
