I’m watching from California. I have noticed that carbon fiber shafts are not used. Is there a reason for that

Same reason they're not used by snooker players. Wood is still the best material, and no change in hundreds of years suggests it always will be.

I started using a carbon fibre cue last year after more than 40 years of using a wooden cue and I'm getting on fine with it. The vast majority of people I know here in the UK still prefer wood.

It's just what people get used to as a kid. I don't think they made carbon fibre snooker/english pool cues 20 years ago when these guys were learning. They might become more popular in the English game due to the rising popularity of Chinese 8-ball and those hybrid cues.
