If you like mushrooms, add some baby bella/pourcini mushroom while. They will be about the same size as your other veggies. Add them 3/4 of the way through the cook time. About 30 minutes before you pull it out.

You could leave out the death of a living being “ingredients” just use vegetables. You can cut and regrow plants but not animals.

Only thing I would've added to this already amazing dish would be celery and pepper for taste. Crockpot version: I would've stuffed the roast with garlic, seasoned it with salt, pepper, garlic & onion powder, browned it on all sides and then follow the rest of your steps
