When I was little there were German American folk festivals. Original US BBQ was offered and many other things that were available in the USA. Every now and then I would go and eat a hot dog with a classmate who was allowed to go to the PX. It was really tasty. I'm glad you enjoyed it here in Germany. Have you ever been to the sausage market in Bad Dürkheim?

A lot of us focus on all the negatives and are forgetting all the positive aspects of being a german. Thats probably why these videos are so satisfying to watch. I love germany, and i love being a german even tho not everything is perfect i think its still a fantastic place to live and grow up in.

I went to Frankfurt for work a while back and I was very impressed with how friendly the people were. I had random people stop and ask me if I needed help with directions on multiple occasions. The food was excellent of course. You're reminding me how much I want to go back to Germany!

You definitely have to try Mettbrötchen (bread roll with raw minced pork, onions, salt, and pepper). It's a German breakfast staple! Also Currywurst, or better yet, Mantaplatte (curried sausage with fries and German mayonnaise). And make sure to try some German fish dishes! I suggest Matjesbrötchen (pickled herring in a bread roll), and Brathering (first fried, then pickled herring) usually served with boiled potatoes.

If you decide to recreate the green sauce, please respect the seven herbs. Borage, Chervil, Cress, Parsley, Burnet, Sorrel and Chives. It's made with sour cream and seasoned to taste with vinegar, salt and pepper. Also an cut up egg. Traditionally it's eaten with hard boiled eggs and potatoes.

Yeah, good knuckles are really soft and juicy on the inside. My preferred local restaurant here in Karlsruhe is sadly hit and miss when it comes to the knuckles. Sometimes they are really good, but other times they come out dry.

Hey Greetz from Germany, the most sausages in Germany are made from pork and there are no beef sausages here beside the ones from turkish super market called sosis and the one from freiburg called "die rote". You have to taste Blutwurst & Pannas. The pannas has to be cooked in a pan and the blutwurst can be eaten as it is. Beside most sausages are red because of the smoking process with beech wood. About the potato salad you had in Nuremberg: Bavarians will claim it's theirs, but it's actually from Baden-Württemberg. (just like pretzels) It's slightly creamy because we use a similar technique to the Italian pasta water trick.

I loved taking a trip to the andecs monastery just outside of Munich. I spent 4yrs in Bavaria in the late 70's and early 80's. I always preferred the Jaeger snitchzel to the weinner snitchzel. Best fast food ever were the little sausage stands that were everywhere back then. Being stationed in Augsburg and Bamberg I spent a lot of time in Nuremberg, Munich and Stuttgart, Bavaria was a great place to be stationed.

OMG, the Schnitzels look typical GERMAN, the crust not fluffy at all. I am from Vienna, when you come over I'll make you a real Wiener Schnitzel. The sausages look like paradise, though. The ribs you had at that Chicago place are the European cut: They are indeed babyback spare ribs. There is also a version with the full layer of meat and fat on it. The pork knuckle was cured, many restaurants do that. I like the non-cured better. Real potato salad in Austria and Bavaria is indeed made with beef broth!

For the pork knuckle I would just grab the two bones in each hand and pull them apart and if cooked properly they’ll come right out. The one you mentioned with brown sauce couldve be a braised knuckle which I had in Austria and it was fantastic.

Is there a difference between a bad and a good Schnitzel? Hell yeah!!!! If you ever go to Vienna, visit Meissl & Schadn and choose Butter or Pork Fat. Best try both and share, it makes so much difference. Also it makes so much difference which bread you use for the breadcrumbs as this is basically at least 50% of the taste.

There are two ways of making the pork knuckles, on a grill and in a oven*. You can only get the dark sauce if you make them in the oven. The knuckles are cooked in the oven at a low to medium temperature for hours and occasionally doused with dark beer. This then creates the sauce, or rather the basis for the sauce. Finally, the stock is removed and the knuckles are fried crispy on the outside at a high temperature. *today mainly in a convection oven

If the Haxe/Pork knuckle is pink it's an Eisbein (ice-bone) and they are first cooked in water. A bavarian schweinshaxe shoulld not have any nitrite and go in the oven or rotissarie.

If you want the best Brezel I recommend going to the Swabian region and find a traditional bakery that offers them. This type of Brezel has a thicker "belly" that is like a fluffy lye bun and also thin, crispy arms that are closer to pretzel sticks in texture. They're too delicate to be made with machines and you can spot the difference to Bavarian style Brezel immediately, so don't feel bad to walk out some chain bake shops if they haven't got the real deal. The Swabians also tend to grill Frankfurter and Wiener sausages compared to the rather white Bratwurst you get in the rest of Germany and will ask you if you want a red or white grilled sausage. If you're looking for the best Bratwurst I recommend going for fresh Thuringian "Roster". They're raw and then grilled over charcoal and while I'm not the biggest Bratwurst fan, these always hit the spot. Insanely juicy, slightly charred crispy skin. My favorites are from a tiny Bratwurst stand in buttfuck nowhere called "Mechelgrün", in Neuensalz, south of Plauen, Saxony. When coming back from work trips he often quickly took the Autobahn exit, drove the 10min to the stand, got himself a freshly grilled Bratwurst, then bought a bag of fresh sausages and sped home to put them in the freezer. for us to eat at a later day.

Really enjoyed this video and thanks for celebrating our culture! One reason that pops up in my head on why the ribs are smaller than in the states could be that our animals are not allowed the same hormone treatment as in the states. If memory serves right over in the US pigs and cows get treated with several growth hormones to get the animals bigger an a short timeperiod, but than again I could be totally wrong. :D Either way nice video and thank you for all the kind words!
