This Turkish eggs recipe was a surprise for me. I would never have thought to pair yogurt with poached eggs and spicy red pepper butter, but it might be my new favorite breakfast. Serve with toasted crusty bread for dipping.
Recipe:
4 eggs
300 g of natural yogurt
20 g of butter
1 tsp smoked paprika
parsley or other green
0.3 tsp chili flakes
salt
pepper
1. Melt butter and add paprika with chili flakes.
Turn off the stove and let the oil infuse.
2. Bring the water to a boil, add vinegar, it is possible without it, salt.
3. Boil the poached egg for about 2 minutes and put it on a napkin.
4. Season the yogurt with spices and mix.
5. Cut the parsley.
6. Put yogurt on a plate, put eggs on top and pour infused oil.
7. Sprinkle herbs on top and add dried croutons.
