I just made my very first carbonara and it was using this video recipe. I must say that I am a Lithuanian who has never made carbonara before and woke up today and decided that today is the day. Dude Italian dishes have 3 ingredients and they’re the most delicious thing you’ve ever had. It’s insane. I had just a platter of meat and cheese in Florence. Best food I’ve had in my entire life. What I get from it is that 1. It requires a skilled chef 2. All the ingredients have to be incredibly fresh (the cured meats on my favourite dish of all time were hanging from the restaurant ceiling to be cut).

Maybe it depends on what kind of ingredients you used. I mean the pecorino or the guanciale you bought could be too salty.. I suggest you to try again changing brand or putting less salt in the water.

I saw chef stefano vid... It is good but he made a mistake and as a result slightly scrambled the egg. He should have added the pasta water before the egg mixture to prevent this. Gennaro wins for his silky smooth texture in my book

One of the oldest Carbonara recipes even includes Swiss Cheese, not Pecorino. But … Pecorino is one of the cheaper Italian cheese … e.g. compared to parmesan … hence I usually grab pecorino … definitely not weighed in gold …

The first time I made this, the pasta was too hot, when I included the yolks, so there was a bit of scrambled egg. The second time I made this, it was a success and I had a beautiful cream sauce. ;) Pancetta worked amazingly, as well! I hope to use guanciale, next time. Thanks, Gennaro!

With Cesar salad? What combination is that? A classic Italian would fit better … Cesar’s itself is quite hearty … Italian side salads rather light and basic. Cesar’s not really Italian. It was created in Mexico by an Italian in the 20s … and is rather a main course than Carbonara ad on.

Made this today turned out amazing. My family isn’t a fan of Italian food because it’s too rich(something me and my gf love) but my eldest brother has a great palette and he ate 2 big servings himself.

My Husband just made this and he’s never cooked anything before! It tasted fantastic! The man is a marvel. After nearly 30 years of professional cooking you learn something from him everyday.
