When I was like ten, my family visited Rome. On a special evening my father decided to make Spaghetti ala Cabonara but the Italian way, so we did it. Cooking this together is one of my happiest memories and we still pull up his video every time we make it. Thank you Antonio for sharing your culture with us🙏

He was a great chef and approachable but I wouldn't say he had a gentle heart. He would get frustrated quite easily and one of the few examples was when he cooked with Gennaro.

I had the pleasure of meeting him at the opening of one of his restaurants about 10 years ago now. I told him how my Mum makes spaghetti bolognese and he just shook his head haha. He then wrote down a recipe for ragu bolognese - the genuine way they make it in Italy - and it blows what we in the UK think spag bol is out of the water. He even gave me a couple of packs of his own pasta to go with it. Such a nice guy and brilliant chef. RIP...

@@team3383 that’s not true especially for his generation, most of them had to learn English very late so have that strong accent despite their language knowledge. Nowadays, Italians learn it from the kindergarten so there are more Italians who speak with a more neutral accent but you always can hear that accent.

den galvez yes, ingredients are homemade and the food is fairly easy. A lot of them were poor man's dishes so quick to make and yet of high quality, because they had to feed hungry workers/family fathers/the whole family after a day of work!

I've literally had 100s of meals at Carluccio's (and buy so much food from there, especially around Christmas) and have probably been to every single one of the restaurants in London. This is the first time I've watched Mr Carluccio himself cook and it made me smile so much until I realised 3 minutes into the video that he passed away a year ago. RIP! :(

I like a very little bit of boiling water of the pasta or cream or milk with it..I mean a "very" little bit..the eggyolk wil bind it if it comes at 70 C. It gives me just a bit of extra sauce and I do not change the idea of the dish in my mind.

I met Antonio a few times, The last time I spoke with him was outside his restaurant on Neal Street, London, He was taking a break from teaching young budding chefs, he was really pleased with the enthusiasm of them. Such a real and rare Gentleman. I was always having problems with my Pizza bases and he told me how to do it properly, don't knead to much and he added I always follow my mothers advise and bless it before cooking,

Thank you Chef Antonio, RIP. Over the years I tried many recipes and this is the best so far. I just made some modifications on my own: 1. I drain the pork oil fully before adding pasta; 2. I add a cup or two of spaghetti water to the sauce gradually and depending on serving size. Thank you and love this channel ❤

I recently went to Rome and had this dish and it had no cream at all! I have had this dish here in America many times but it always had cream. Both ways are delicious. But yes this is the authentic way to make it with no cream. If you like it with cream then eat it that way. Not sure why people act like its a bad thing, enjoy food the way you like it!

Just during lockdown I discovered all the great recipes I am sticking to since they always work out great. Antonio taught Gennaro and Gennaro taught Jamie and they are perfecto! Now I start buying their books to keep at my counter top for every day reference since I found great recipes I am using on a daily basis for every occasion. Just accidentally saw Jamie Oliver on KZbin, attracted to simplicity and it worked and subscribed and discovered his two awesome Italians.

This video haunted me for weeks!! I finally got all the ingredients, the pig cheeks and the Pecorrino cheese and just made it today!! I can't believe I never had pig cheeks before!! It is so tender, yet full of flavor!! Just incredible!! I only messed up the temperature of the pan, turned off the heat but didn't wait long enough so the sauce did form some chunks of egg here and there, but next time I'll make it perfect 😁
