I poke a series of small holes in the foil, I think it distributes the heat better while keeping the flames off the chicken. Heat the Q up to around 400 put the bird in on a rack and turn the temperature to low, which is around 300f to 325f. Let it go until it gets to 165f, usually takes about an hour and half. Take it out tent it with foil for about 20 minutes.

I used to poke holes in the foil, but I've found it to be unnecessary. I like to roast chickens @ 375 F, but yes, definitely let it rest before carving.

We closed our cottage for the season this past week. Either one is a great choice. For the Weber Genesis, I prefer the model right before the newest model... The Genesis II. It's an excellent grill, especially with the sear station and side burner. My Napoleon is the Rogue XT 425 SIB. It's as good, or better than the Genesis II. I like the Napoleon, because I already have two kettles, a Q, and a Go Anywhere and don't want to be too much of a Weber fanboy.

Hi! Can I use a metal roasting pan (with the roasting rack) in lieu of the double layer aluminum foil? Or is it better to use the aluminum foil? Thanks!
