Our Best Mead Recipe. Our Best Mead, Wine and Cider Recipe list. Our very own "Top 5 list", which is really a top 10 (there's two of us!) of our favorite mead, wine and cider brews. We made this in early 2021, so it's everything up to this point. We might make another top favorites list someday too. This was more difficult than we both thought as we have many more than 5 favorites! But, Derica and I sat down and made up our lists... some interesting things came out too! I am so new to brewing so I don't have a top 5 favorite but have been bingeing all of your videos for the past two weeks. You inspired me to try the sweet red wine! I am so excited for it to finish!

Same here. I will be making the sweet red wine soon but have taken a twist first and have started brewing a white grape and peach wine using the same yeast and starting gravity. Then I realized I should stick to the original... so, as soon as my primary fermenter is empty I will begin the sweet red.

My favorite is the ginger beer.. however I changed it up and used a cup of brown sugar and about 4x the ginger 2x the lemon with red star blanc and a dash of milling spice or apple pie spice/clove

My favorite was your "first mead" recipe with raisins, orange peel & bread yeast. I still make it & it's much better than commercial versions made here in Australia.

Oh my! My favorites are the Ginger mead and Dragon's Breath mead. Both are very popular and I have a 5 gallon batch of ginger mead in conditioning. It's a tribute to my brother-in-law who loved it but passed away from covid in November. Thanks for your hard work and as always, I love you guys.

Watching your Top 5 Brews. Had a couple drop in a week ago . They are from here . But live outside Atlanta GA. South of the Airport , ( Newnan Ga.) He Retired from Delta Airlines . We used to go flying together, when his father bought him a Plane . I was his spotter , because he would wear Blinders , and fly by Instruments . Practicing to take his test on Instrument flying . Anyway, they just came back from their family Compound in Cedar Key . Big 2 story , U shaped place , 2 different body's of water 🌊💦 in the front & back yard. Anyway we had a Wine 🍷 tasting while they were here . Since they had been on a Cruise with a Wine tasting . So I broke out 5 different types of Wine. Got my little 5 by 8 inch note book 📖 with the ingredients of each . They did the tasting of each . Picked 1 thru 5 . Then guessed what was in each . I flipped through the pages , and read the ingredients after each Guess . She could pick out most of the ingredients in each Wine . Results as follows , Swla Wine , Viking Blood 2020 , Split Batch Brew , Juice Wine Blend & Fig Wine . I took a Bottle 🍾 of number 1 and number 4 . Mixed em together , put em back in the bottles . And it became the Number 1 . That's what I'm having right now . But I'll be Racking the Viking Blood 2020 into individual 1 & 2 gallon glass canisters wide mouth snap down tops tomorrow . Because I only have a few bottles of everything , plus 1 gallon of each , except for the 5 gallon Carboy of Viking Blood & 2 Fermenter's of Split Batch Brew . So Viking Blood is up next. It finished at 17.550 a.b.v. P.S. they didn't get to try my Hog Grape 🍇 Wine , Bronze & Purple . It's all gone . But there's more to be made . 🤠

My favorite , is the Hog Grape WINE 🍷 Bronze & Purple Grape 🍇 . I'll do like people used to do . I'll fill the Biggest pot I have with home grown grapes 🍇 . Don't even bother with mashing em up . Fill with Well Water 🌊💦 , add sugar to taste . Cook on medium high until low boil , stir once in awhile . About 2 hours , until grapes 🍇 swell up and split . Keep em on low boil until the meat inside forms Bubbles in the meat . Everything will disintegrate , except for the skin of the grapes 🍇 . At that point , turn it off . Let it cool . You can eather pour the juice through a colender to put in the fridge to cool & drink , or pour everything into a fermenter , skins & all . That's always been my Best Wine 🍷. P.S Don't forget your Yeast . And check your O.G. 🤠

I live in the Panhandle, 1/2 way between Panama CityFL and Dothan AL. I have been a beer brewer off and on for years and years. I am also a beekeeper. My backyard apiary produced over 300 lbs of wildflower honey this past season and I decided to get back into the hobby, with Meads and Wine....At present, I have six different meads in various stages. I think so far my FAVORITE is going to be an orange mead...Melomel, I have two versions of Orange aging in 1 gal jugs. They are both made with fresh-picked, fresh-squeezed oranges from my orange trees, one is very high pulp, and the other was lower pulp with the zest of an orange added in secondary. They both taste just like fresh oranges smell and are delicious. So far maybe my favorite, but I have 2 gallons of wild elderberry mead, foraged from the woods on my property, that I started a week ago, and from the smell, it could possibly displace the orange, time will tell! Next may be a ginger beer fermented on fresh ginger from the garden bochet with honey until carmelized!

I'm so pleased that Banana Wine got a well deserved honourable mention, as it is my personal favourite that I have made from your plethora! I made mine with bread yeast however, (as I am broke and it was cheap!) meaning that it is super sweet and perfect for a dessert :) Love the videos, so glad that the Viking Blood kept you two alive and kicking on our screens :)

I've made an exceptional wine with the simple red wine recipe by including pomegranate juice. No idea why but it elevates it

Been brewing for about 8 years. My first mead is collecting some dust now. JAOM , made it once and made some bottle bombs. I salvaged a couple bottles and drank them quick. It was by far one of my favs I’ve ever made. I just moved and found bout 20lbs of honey, will be brewing a 5gallon batch in the coming weeks. Couple of my wife’s favs I’ve made were blueberry lemon and a blueberry pomegranate

I’m brand spanking new to this world of brewing and fermenting. My daughter got me started with a very rudimentary mead kit for Christmas. I knew that I didn’t know much, (almost noting in fact), but thanks to your channel and down to earth presentation, I now know a little, enough to get started on the right foot anyway. I am planning on making a few of your recipes starting with “My first mead” and “sweet red wine”. I have visions of gallon jars in various stages of fermenting and aging lining my basement wall. Jars and bottles full of merriment and celebration. Suddenly I have this urge to locate bee-keepers in my area and purchase direct. I’ll bet 4-H might even have some young folks eager to make a steady profit to keep this Friar Tuck jolly. Thanks for your channel.

I have only made the sweet red wine…so far. However, my husband and I have taken it a bit farther to the pallets of our family. We added 2 small jalapeño peppers to it. That made the final product a bit drier, with a warmer finish. Friends and family enjoy both recipes, the original sweet red as well as the jalapeño red.

I made a blueberry pomegranate wine from the RW Knudsen juices with tea and black peppercorn and used k1 yeast. It was the most disgusting wine I have tasted 2 months after ferment. Then I forgot about it bulk aging and it is now my favorite. I have 2 more bottles and the 2yr anniversary is 1 month away. I can't wait.

For now, my favourite brew that are 100% made from your recipes are the Mojito Kilju (still fermenting but tasted already), the ginger beer, the ginger mead and the beginner’s mead. On equal footing. Can’t seem to pick a favourite. I’ve yet to brew more and have to say: thank you SO MUCH for all the inspiration! My Cherry-Berry Cyser that’s bulk-ageing right now was heavily inspired on your recipe for Viking’s Blood. Could that be my fifth? Mmmmmm... it’s still got a ways to go so we’ll have to see. I have to say that since I’ve started following you my brews have gotten so much better. More balanced, more flavourful. More.... well, just better! Thank you for posting your favourites. I’m already looking forward to your next video!

I've made the basic mead (raisins, orange peel, tea, 71b) Currently, I am doing one based on your spiced mead but with some more spices: (clove, coriander, cinnamon, ginger, nutmeg, vanilla) based on a combination of "spice cake", "Pumpkin pie" recipes on the internet. Looking forward to it.

Watching your Top 5 Video . Earlier today I Backsweeten the Sugar Beet Wine , I'll call it the Split Brew ,for the last time , with Honey 🍯 . Decided to do a side by side taste test , why not , was ready for a Glass 🍷. Between Your Viking Blood 2020 & My Split Brew . The Viking Blood is still in Conditioning , Clearifiying . The Split Brew is on the last leg of Ferminting . As far as Color goes , I got you Beat , but Hell , I got everybody Beat on Color . You want the Prettiest Wine of all Time . Use Sugar Beets , but it takes a lot of Taste Adjustment . As far as Taste , I'll take a Sip of yours , and say , I like that Best , then try a Sip of mine , and say I like it Best . It's been back and forth . Finally made up my Mind . It's a Dead Heat , I'm going to call it a Draw . But I'm coming back for another challenge in about a month or so . 😉 🤠

I just did my own version of Viking Blood as a hydromel. 500g of wildflower honey, 400g sour cherries, S-04 yeast. So far it has turned out great.

I made the craisin mead and found that it was crazy good when aged with a tea made from orange zest and cinnamon. Have done this a couple times now and both the wife and I love it

The favorite brew that I keep coming back to is your "first" mead. I love it because it is simple, but it also is a great jumping off point for developing new recipes.

I made as my second mead from you, your Blueberry Hibiscus Honey Mead, definitely my number one as well as friends and family. Originally a one gallon batch I had to recreate it in a five gallon soon after. Second was Black Forest Chocolate Cherry Mead, my own version of the mead you made with the Montana Wild Crafted Honey and the Tabletree Snow's Cherry Juice. Third on my list, I made your Jalapeños Capsicumel using a Mesquite Honey direct from Amarillo, TX and Fleischmanns Bread Yeast that was absolutely phenomenal. Final two, runners up in my Top 5 would be your Fey Wine and and a Spiced Apple Mead. Finally, I have yet to make any of your Viking Bloods but I believe your VBM 2020 is going to be reproduced here very soon as well as your Raisin Wine. Great show Brian & Derica, been waiting for this one for a long time now. Very well done, keep up the amazing work. Really enjoying my new hobby.

as of 10/14/2023 I have a spiced megethlin in secondary aging right now. Started in early March and going to bottle for Christmas. just north of 17% and sneak up on you good right now.

My first brew with you guys was the vikings blood mead ( original) I messed up big time, that I had to go get more more juice to keep the hydrometer from jumping out of the carboy. The gravity was that high . And it took me so long to tone down the gravity so I could even read it. Guess that's what made it so good, for me. One lift bottled 5/28/20 that was oaked and its has aged 22 months under the cork. That's how long I've been watching you guys. Since then I've made many meads and wines all with high gravity's. One i did where i step feel it till the yeast couldn't work anymore. That yelled a ABV of 23% . Remember the cranberry mead , i have a bottle, bottled 2/ 27/20 aged 24 months under the cork. abv @ 17.3% But I've never made a traditional mead yet. But would love to make it with Buckwheat honey. Have you guys ever tried Buckwheat honey for a Mead ? Not sure if I should use just the Buckwheat or use it with a milder honey. Any suggestions,? Brian.

I've only had the banana wine from your channel and it's amazing. Viking blood is aging and "my first mead" is in the process. I think I put too much orange peel though because that's all I smell through the airlock.

Right on you guys! I love that Derica picked the Viking blood 2020. Your OG Viking blood is what helped decide to go from talking about homebrew to actually making it. Thank you both! I did tart cherry hibiscus with sweet cherry in secondary and that was magical. The spiced metheglin is on my list to create as well. so far i have a top 3. 1. Viking blood 2020 2. The Franklin 3. Ive made alot of normal meads and I havent been a big fan of any of them tbh(which makes me sad) except for one and that is the spiced methaglin. The banana wine is AWESOME. Loved it. My favorite so far has been the Mojito Kilju. Tastes amazing.

I've made the spiced mead and that one is definitely my favorite. I've made a good few more but the sassafras mead I made and the blueberry mead come close second and third.

I really liked the Bourbon Bochet, Spiced Metheglin, and the Capsicumel . I am going to do it again but using a darker honey like the Buckwheat honey.

Apple and strawberry wine, even spirit drinkers around me rave about it. Crisp, clean and at 13+% quite a nice kick to it, finished semi-sweet. I had to back sweeten it 4 times, thinking that each addition of sugar would be enough. Fermented with a local bread yeast, but as Derica says, "yeast don't read".

Well , I'm doing a version of your Viking Blood 2020 , since it was in your top 5 . Except I increased everything by 5 . Started out fine , got to 3 clicks a second last night . I call it clicks because I have a 3 piece airlock . Doing 4 clicks this morning . Clicking away like a Rolex Watch ⌚ . I know it looks like a Rolex Watch second hand sweeps , but it actually clicks 10 times a second . Anyway , the only Batch I've had Blow off 🌋 was a juice wine 🍷, and it Blew the first night , the only time I made juice wine, and the first time I Brewed inside . I did Charlie Paps. Prickley pear mead straight from the book a few years ago. Used white labs sweet meade yeast. Don’t remember the number, but it went into the primary a deep red color, racked into the secondary like a month later and after around 3 months in secondary it cleared out to a deep yellow color. I kegged it and it was the best Meade I have ever had. So complex but still had the prickley pear notes in it. It was a truly sublime experience.

I just started brewing, using almost all of your recipes, and none of mine has really aged enough to give my input on, however I brewed my first cyser yesterday, using your super simple cyser recipe, and it smelled just like I want it to taste, we will see in about 2 months. Keep doing what your doing, I sure wish it was possible to sample some of the things you guys have made. My next undertaking though will be a basic hydromel, I can't wait...... I also never thought I would want to brew anything but mead but I am now inspired to try to make your sweet red wine.

Thanks, I'm going to re-watch those choices. I started an experiment on Saturday. A spiced wine; kind of a ginger wine. I did some research and combined ginger, raisins, cinnamon, fennel, rosemary and a little Limon juice. I did not have honey, so I'm using sugar. I stated off with hot water and let it steep while it cooled. I like the taste, so I am hoping that is a good sign.

I knew before you started that Brian’s #1 would be Spiced Metheglin! I totally agree, It’s my favorite too, along with Vikings Blood 2020. I haven’t made any for awhile, since I had no honey from my bees this year. Yeah, I’m too cheap to buy any for mead. 😉

So far the only one that I have completed to bottle is your "first mead." It was that video that got me over my someday hump and actually make a mead! I have a blueberry/raspberry melomel and ginger lemon in primary based off your videos and am excited!

My wife’s favorite brew of yours that we have made is the Cherry Chocolate Melomel. We have made several versions and all have been 👍🏼 with her. My favorite and all the guys at work who I have shared it with is the Dragon’s Breath Mead. A co-worker is a bee keeper on the side so him and I had a barter system where he gives me free jugs of honey and I turn it in to Mead for him. Always his favorite requested style. The mix of sweet berries and spicy jalapeño are awesome. Congrats on the 100K subscribers.

Thanks for your Top5 List. I must admit I didn´t watch all your video´s yet (but I plan to) because I stumbled upon your channel just a few days ago. Atm I am preparing my first mead/brew attempt according to your "first mead" video. Still searching for a yeast cause Fleischmann´s doesn´t seem to be available in Germany :D (which is strange cause the name sounds familiar :D) & currently going to the store to look for bread-yeasts is not so easy due to the (Post)lockdown-restrictions. But sooner or later I´ll probably find sth on amazon.

Here's my five. 5 the first cinnamon brew two weeks ago. 4 same brew two days aged in a bottle. 3 same brew aged another day. 2 same brew an hour aged longer than 2. 1 the final bottle of the batch which made it to midnight the same day.

Only made three of your brews but they are awesome so I’ve done repeats of them. 1) First Mead 2) Klingon Blood wine 3) cider. I have a few on my to do list such as mojito Kilju, black currant black pepper wine, spiced metheglin and dragon breath Mead. I could go on but I’ll stop here. The hibiscus mead is my favorite. When you were replicating the Dansk Mjod Viking Blod, I stopped at the hibiscus mead! Amazing!

@@CitySteadingBrews 100% correct on that. I should have hard entered to break it out more. The Harvey saga was absolutely amazing because of the reference to the Jimmy Stewart movie, Harvey. The Stark reference was 100% spot on. I just love the internal strife Crichton goes through with "Harvey" for a long portion of the show is all. I normally do a Farscape binge once a year just because. The fun fact, don't know if you know or not, but the final Episode of Crichton and Aeryn Sun in the boat is a DIRECT reference to SeaQuest DSV. The final episode also finished on a boat when the corp canceled that show before Rockne S. O'Bannon could finish it how he wanted.

WIld strawberry mead with a hint of thyme and sage worked and tasted best, called it Shieldmaiden's blood and runnerup was a Methaglin with so many local wild summer herbs, I can't remember them all, and lemon zest. Next experiments, lemon and green Mate mead, and a lapsang souchong /hibiscus mead. I might bochet part of the honey for this one. So glad you two didn't give up making vids, where else is there to go for great content and inspirational, fellow creative, geeky gardening and cooking and brewing peeps?!

My favorite two are VB2 and jalapeño mead. I added some subtle changes to both. I used heavy char oak spirals on VB2. For the jalapeño mead, I used avacado blossom honey in primary and back sweetened with orange blossom honey. Both of those have been the favorites with those that I share my brews, so much so that when if/when I make them again, they've asked to contribute to the purchase of the raw materials to insure that there will be sufficient quantities of finished product.

I have a list of *all the brew recipes you've shared with us and it's about 62 recipes for homebrew! Pretty sure I started watching at the original Vikings' Blood video and I can't believe so much time has passed! *I did include revamps like the different versions of Vikings' Blood, but not the mixed drinks (and I didn't include the Lemoncello). I highlight the ones I've tried and there's so many more to attempt! You both and everyone involved are phenomenal!
