I noticed that too. Claire always reply to the comment. Very rare to see on KZbin channel. Most KZbinr asking to comment but they don’t really respond to those comments or messages. The main reason I use oil instead of butter is because butter is very expensive here in comparison to oil

I've been experimenting with replacing butter with oil... I'm guessing here but it seems maybe use 20% less oil than what the recipe calls for in butter by weight. If the recipe doesn't call for an egg, add one if possible (emulsifier), and add a little water and beat as much air in as possible.

I agree. The ones made using butter turn out lighter, fluffier and more flavored. The oil recipe doesn't rise as much, is usually uneven in terms of air bubbles and may give off the smell of oil. I was wondering if there is any way using additives such as GMS to pre-emulsify the oil with water or milk and then use it as a butter substitute?

Hey, yes oil doesn’t act as a leavener which explains why your cakes cake out that way.. I’ve never used any additives like that so can’t really advise, but it’s always worth experimenting

Thank you for this video. I love baking but I never understood why quick breads call for oil rather than butter. I’ve made banana bread with both butter and oil and it comes out similar.

Thanks! I've been baking vegan lately and I love the recipes that use vegetable oil instead of a vegan butter replacement. They're much more affordable and i always have oil around. Good to know when it makes a good substitute!

In my bakery, I find that oil seems to work the best in my Chocolate cakes and Carrot cakes.

This is why the Crisco company created The buttered flavored lard so even when you melt it down because it's solid lard it still has that buttered flavored even though it's oil

Should I use Stork or butter when making your regular cake? For your sponge cake you specify Stork is best, so I am confused. Thank you x

You can use either. Butter is superior for flavour, however not necessary. Baking margarine/Stork gives fantastic results.

hi! Great videos and I have a question regarding butter/oil. I understand the properties of each and what they add in terms of texture etc.. If I have a cake recipe that includse baking soda and baking poweder but calls for a cup of melted cooled butter, will I get a moister sponge if I use half butter and half oil, sticking to the one liquid cup total? omg thanka soo much.. i wanted to bake a red velvet.. some recepi says to cream the butter with sugar and then some recipe says to melt buttter and add in oil and other wet ingredients.. so im wondering what is the difference in both? will i get same fluffy cake with both way? whch way helps to make a flufy moist cake

You’re welcome.. the creaming method is pretty much guaranteed to make a light and fluffy cake.. recipes with oil or melted butter will be slightly denser, but also very moist and soft. Happy baking 😊

When making red velvet cake I use only oil, it makes the cake super moist, my recipe is add 1 1/2 cup oil to a bowl with two cups sugar and mix for a min, use a whisk. Then add two eggs one at a time, add in vanilla. Sift together three cups cake flour 1 teaspoon salt 1 teaspoon baking soda 2 tablespoon cocoa powder, measure 1 cup buttermilk and half a cup hot coffee. Add 1/3 of ur dry mixture, mix and then add some of your buttermilk, mix. Repeat until dry mixture and milk are gone. Add hot coffee, mix. Add 1 teaspoon vinegar, and add your coloring add 1-2 ounces, mix. There ya go enjoy, I recommend making a simple syrup and shower quite a lot of it over your cakes when they come right out of the oven, bake the cakes on 350 for 25-35 minutes, when you insert a toothpick into the center and it comes out clean it’s ready, simple syrup is made by boiling equal parts sugar and water together until clear add a teaspoon vanilla and let cool. This recipe is soooo moist and fluffy you will enjoy xx ❤️

Hi Elaine.. really it depends on what you are making, as butter and oil function differently. Once you understand the role of the fat used in a specific recipe, you can then make adjustments/substitutions. And, you’re welcome 💕

You’re welcome. It’s difficult for me to advise- it depends on what cake you’re making. If you are new to baking I would follow a tried and tested recipe first, and see how it works out. As you build up practice and experience you can then start to experiment 🎂💕

I found a wonderful chocolate zucchini cake recipe that calls for oil in the recipe. Can I substitute melted butter for the oil? I've always used butter in those kind of recipes, but I don't want to mess this cake up.

I don't see why not.. sometimes we have to experiment and take that risk. Both, I imagine, would create a tender and moist texture, butter contributing a richer flavour.

Hello, sorry for the slow reply. Yes you can do this.. although it does depend why you are making as both have different properties. For example, if you are making a traditional creamed cake, I would start with a lower amount of oil as butter helps trap air bubbles, where as oil does not. Sometimes we just have to experiment with these things 😊

Hello 😊 Yes you can.. mostly there will be a change in the flavour (butter has a superior flavour), but you will also notice a change in the texture.. perhaps sub half at first and see what the results are, it does of course depend on what type of cookies you’re making

Could I use both butter and oil in a cake recipe? I usually use a sponge cake recipe with the same quantities of butter,sugar and flour and I was thinking to substitute some of the butter for oil for extra moisture. Could this work?

? If a cake box cake mix call for just oil and you want that buttery taste how much butter would you add or can I just add butter extract? I always sift my box cake mix also and use some sour cream ?

You can sub the oil for butter yes, or use half and half and see how that affects the flavour. I’d recommend using real butter rather than extract although if cost is an issue there is no harm in trying the extract. Sour cream will add additional moisture and richer flavour most likely

Hello Shana.. I would use what the recipe calls for, however it really depends what type of cookie you are making. Butter is generally considered best for biscuits/cookies

i tried making a chocolate bar and the recipe had butter on it. i followed every step but my chocolate ended up with the texture of a brownie (fluffy not hard) do you think replacing butter with oil will help? (the recipe had more amounts of liquid butter than cocoa and sugar 4 vs 3)

Good day! I have this brownie recipe that calls for butter only. Would it be better if I add an additional 20% in weight of Sun flower oil? I really like super fudgy and moist brownies. Would that help, in your experience?

Hello 😊 You can do, although the real secret to fudgey and noisy brownies is not to overtake them.. take them out the oven when there is still a slight wobble

Is it better to use melted butter in crinkles than oil? My crinkles spread too much even if I've chilled them overnight + 1hr of freezing before I mold them and pop them into the oven. I'm living in a tropical country btw

I’m not too sure what crinkles are but yes a fat that is solid at top temperature will help

Hi there, you can give it a go.. you won’t get the buttery flavour of course, and the texture may be different, but perhaps try it on a small batch and see how they work out.

I have no butter or marg but going to bake a chocolate sponge cake using vegetable oil as a substitute. Hope the taste difference isn't too noticeable, never used oil in cakes before so I am a bit nervous in case it makes it taste like a store bought cake or something, lol. Wish me luck 😂 Cheers!

Hey.. there are lots of recipes out there for chocolate cakes that use oil- makes it super moist! If it’s the first time you’re baking this, I would find a tried and tested recipe.. that way you can’t really go wrong. Happy baking 😊

Yeah!! I learnt the difference between the oil and buttered based cake. I bake with oil and it's so fluffy and light but what are the health benefits of oil?. Like which of them would you advise for baking? I await your response

If your brownie is dry it sounds like it has been over baked, so I would bake for less time- there should be a little wobble

I tried compensating oil to butter as butter 80% and oil 20% it turned out better texture as brownie made with butter becomes harder on the next day

i need help im trying to make box brownies and instead of oil i want to use butter. It’s asking for 2/3 cup of oil so do i put 2/3 cup of butter?

First, I would like to thank you for the video and I have a question from you and my question is :- Sometimes my cake got baked properly from the center but still get raw from the sides and sometimes the cake got baked from the sides very well but still get raw from the center. You’re welcome, thank you for your kind words. It is difficult for me to advise without seeing your recipe and method but it could be happening for several reasons. Sounds like uneven baking so may be your oven. If it’s raw in the centre it needs cooking for longer, perhaps at a slightly lower temperature. The only way to find out is to keep experimenting, but if the recipe continues to fail I would find another one. I hope that helps.

You’re welcome. I would suggest baking your cake at a slightly lower temperature.. are you using a fan oven? Difficult for me to advise further without seeing the recipe and method

Sugar is a natural preservative, also keeping them cool and well wrapped helps prevent them drying out as quickly.. also fats and emulsifiers

Thanks for the video, I have a question, I wouldn't use oil to make the lamination process making croissants but the recipe calls for butter inside the dough too, would it make a difference if i used oil instead of butter there? Thanks

You’re welcome. Personally I would always use butter or a suitable margarine for laminated dough.. oil may make it a little greasy and you won’t get the same rise as it contains no water.

I can't give you an answer as I have never used a boxed mix, however I imagine it would produce a fairly dense and fudgey texture.. give it a go 😊

Absolutely yes.. cookies made with 50/50 ratio of butter to margarine will generally be a little softer and will spread more (depending on the fat content of the margarine). Pure butter will give a richer flavour mostly.. you can use unsealed or salted - if using salted simply omit any salt already in the recipe. Hope that helps! 😊

Most types of oil will do fine.. some may impart a flavour (such as olive oil) so bear that in mind

You won’t really need to make any other adjustments, just be wary that your cake will be much denser if you use oil.. although fruit cake is pretty dense as it is!

I would have a go at subbing some of the oil for butter, and melt it so that it is a similar consistency for use in your recipe. Experiment and note what the results are.

Yes I’d say so.. 25g is a very small amount so the butter is probably only there to add extra richness and flavour to your bread recipe.

I have problem my vanilla cake with oil and separated eggs method tends to shrinks alittle bit when its cooling ..any solution??? 4eggs 21/4flour 1/2oil 1cup of milk 2and1/2 TBls of baking powder I hope u can replay me cause I love the result of it ..but this is what annoy me

Whisked sponges are tricky and prone to shrinking a little. Unless it’s completely sinking I wouldn’t see this as a major issue so don’t worry about it

Use separated eggs method, use 1 cup oil and 1 cup lukewarm milk and 2 cups of flour with 4 eggs and 4 tsp baking powder. Whisk your egg white and yellow separately, and use 1.5 cup sugar.
