I wanted to write out the fudgey brownie recipe for myself so I figured I'd share! 6 oz/170 grams bittersweet chocolate 1 stick unsalted butter (1/2 cup) Melted together 1.5 cups sugar slowly added to the chocolate mix 3 eggs, one at a time 1/4 cup cocoa powder little bit of salt 1/2 cup + 2 tbsp all purpose flour 8x8 inch brownie tin Cook at 350 degrees F (175 C) and bake 35-40 mins

My grandmother made cake brownies. They were a bit like German chocolate cake. She used cocoa powder & Wesson oil + peacans. I loved them because they are not too sweet. I have never been able to duplicate them.

Yo guys DO NOT forget to consider the size of the tin you're using. I used a bigger one (approx. 8x15 in) but the same ratios and amounts as in the video cause I like brownies thinner, so it definitely does not take 35-40 minutes (for fudgy one.) But the recipe is amazing! although if you use larger tin, you might also consider baking on lower temperature (maybe 335'F / 165'C) so that the corners don't get burnt until the center is baked. I made a double batch of the fudgy recipe in this video in a metal 9x13 pan (with square edges, not sloped) at 325⁰F for 48 min and it was perfection. Just in case anyone else is wondering about the time and temp like I was ;)

Hey does your oven heat up really quickly? Cuz mine gets really hot, and I lower the setting by almost 30 to 40 degrees while baking so idk how long to do it for fudgy brownies

@@zahraali2858 i would do 300⁰F then... I have a stacked double oven and my top smaller oven bakes these a tad too hot/fast and the middle kinda collapses. I also found that if I cooled them by placing them on the stove/near the oven, the ambient lingering temp helped prevent that caving while I was finding my perfect temp and time.

I just made the fudgy brownies and they turned out like the ones in the video, but they were really sweet. For anyone about to make this, I suggest using bittersweet chocolate as it will balance the flavour without upsetting the ratio of sugar to the other ingredients. Oh and the full recipe makes a lot of brownies so you might want to halve it. Overall, a great recipe that I'll make again!

It's not "us Americans", it's this video. You can't possibly believe we all use the term, "one stick of butter"; that's ridiculous. Sticks of butter come with measurements on the packaging, and every recipe I've come across asks for specific amounts like 1/2 cup or so, and I just cut the stick where the marking is for 1/2 cup. I've never been prompted to just use, "one stick", whatever that means. I don't understand why people always look at stuff like this and assume aaaall Americans do this or are like this but it's really annoying. And even if we DID, it's just butter :l not that serious.

Oh, and yes, a "cup" is a unit of measurement. Not like a coffee cup, or something. I BELIEVE (not entirely sure) that a cup is equal to 8 oz or so. We have actual measuring cups, we don't just grab a drinking cup and use that to measure lol

When I made the BEST BROWNIE EVER (another recipe) I used almost the same amount of flour as cocoa. Not kidding! I had 64 g of flour and 56 g of cocoa, so less than 2 teaspoons in difference. This made the brownie a lot less sweet, because cocoa is very bitter, and obviously enhanced the chocolate flavour. I also cut the sugar quite a bit, and it turned out devine! Still with the wrinkley top, despite less sugar. So that's definitely a tip! 1/4 cup is very little cocoa compared to flour imo.

Bravo! I loved the recipe! I used 50-60% cocoa bittersweet chocolate and decreased the sugar amount into 1 cup and 1-2 table spoons. Also instead of using 8x8 inch tray i used 2 trays, each one 20x15 cm and baked them on 160 celsius temperature for 20 mintues. This way i got thinner pieces and more of them :) It came out delicious and fudgy!!

I've found a third way which I fancy more than both. Use the amount of flour you would use for a fudgy brownie but instead of mixing the melted chocolate and the sugar first, mix the sugar with eggs in high speed until it becomes foamy. Then continue from there... That makes it lovely!

Tips from perfect Brazilian brownie recipe: 1)Add a tea spoon of instant coffee, 2) Part of the sugar is brown sugar, 3) Give 3 hits (on the table) to the pan before baking to settle the brownie, 4) Give 3 other hits when take out from oven, 4) Cut with plastic scraper (those large, square shape) it will not stick to it. (I like most nuts by themselves as a snack, but ever since my first crunchy peanut butter sandwich as a little kid, I never liked nuts inside things)

This recipe (well, the one for fudgy brownies) is great. Made it twice now. It IS a bit on the sweet side for my taste (2T + 2t sugar per brownie is a lot of sugar), so next time I'm going to try cutting the sugar back to one cup and see how that works. Unless you like a pretty sweet brownie, my advice is cut the sugar a bit.

So on the off chance that anyone sees this comment, I just made a batch of the fudgy brownies with Guittard Akoma Extra Semisweet chips (55%) and I used 10 tablespoons of sugar. They are delicious, just sweet enough, and this is how I'll make them in the future. I wouldn't go any lighter on the sugar than that.

I made this and this one tastes soo good. Pro-tip: use less sugar. The recipe says that you need 300g of sugar but I only used 230g and its still really really sweet. Also, make sure to cover the top of the brownie with a tin foil to make sure that the top is not burnt. My oven's pretty hot so mine was a little bit burnt but its okay.

I’ve been making this recipe for years with half the sugar and I’ve never had anyone tell me it wasn’t sweet enough. I usually pair it with vanilla ice cream so it works great being less sweet

Hi Joseph, you have educated me lots about kitchen conundrums especially my favourite, chocolate chip cookies and French press coffee vs other methods. I don’t get it how anyone can give you a Thumbs down instead of thumbs up. You’re so educational and fun to watch. Those people who gives you a thumbs down I would like them to write you a better way of yours and why they don’t like your way. You always give a comparison and different options which I just love. All the years I have been using a French press I learnt today that temperature of water kills the coffee as well as makes the coffee bitter and so on. nah you usually don't use chocolate in chocolate cake sponge, it goes against proper raising.

If something makes your mouth itch it's very likely that you are allergic/sensitive to it. My brother always said that tomatoes "feel/taste/itch" like pineapples (which is SO not normal) and then we found out he was reactive to it :/

Yeah, thought I’d give homemade brownies a try after only using boxed mix’s since we’re in quarantine.. these were somehow able to be both burned and raw at the same time. Also, my chocolate melted perfectly then turned really hard as soon as I put my buttery spoon in it. I know what I’m buying as soon as this is over.

indeed it isn't - measuring in volume rather than weight is quite unreliable! A cup of flour could be packed really close, sifted on very loosely, it could have a little heap or a little dome, it could be more or less finely ground resulting in a different amount.. For regular cooking it doesn't matter much, but for baked goods I prefer a recipe in the metric system because I trust my scale a lot more than my set of measuring cups.

i used this recipe guys, THE BEST BROWNIES!!! i beated a little bit longer the eggs and saved some chocolate chips for the folding part and they came out PERFECT, soft, very chocolaty and fudgy... finally i find the recipe.
