I never really comment but wanted to say that: 1. I don't like (and have never liked) carrot cake but I really felt an urge to make this carrot cake and I like it. A lot. 2. A cake that tastes better eaten cold from the fridge is a thing of joy to me. 3. I very successfully halved this recipe to make a slightly smaller cake, using 2 medium eggs instead of 3 large, and adding another 10g of flour. 4. Thank you.

After grating my knuckles off for years, I started using a cut glove if I have to use a grater. For grating large volumes, I use my food processor.

So I thought that cold cake would be dry and cold frosting would set hard. Not here. Because there's so much carrot, the cake stays moist, almost mousse-like, the frosting buttery and smooth. It's heaven. And for people like me, who like to eat cake right through summer, this is now a go-to.

Wonderful vid! Beautiful cake! And yay…I agree totally with Alison about not peeling carrots! We all learned in 8th grade biology that most of the nutrients are right under the skin. Why would you get rid of that? I use a stiff vegetable brush & scrub vigorously. Your carrots & dates idea looks wonderful to me, but sadly my DH won’t eat dates. (He puts up with me being mostly vegetarian.) Actually, I like raisins, but usually use more interesting things instead. And I love nuts in everything! Love your version, tho & having it cold is genius!

Among the many Hard Agrees for me in this video: 1. I never measure stuff when cooking, but a kitchen scale is indispensable for baking. 2. Why sift when you can whisk? 3. No one will notice if you don't peel your carrots (esp. in a context like a carrot cake). Mild disagree: A raisin is a good surprise... especially a golden raisin!!
