Having accurate measurements is a game changer. Once I got the scale that was 0,1 gram accurate so I could begin to measure baking powder, salt, vanilla, dry yeast and spices by weight it just made my baking a lot more consistent and I had more control over the end result.

just a quick note on testing the thermometer: if you're at high altitude, water boils at a slightly lower temperature. i believe it's about 2 degrees lower (f) for every 1000 feet above sea level.

I'm a true cat lover since childhood. They are a source of love and peaceful calm for me. I'm also a serious baker/cook. I find those loves don't mix. I cannot tolerate hair of any sort in my food, a cause of immediate gastric revulsion for me. I'm always surprised to see others who allow animals in their kitchens or kitchen counters. I might have a cat in my living room but it is barred from my separate closed off kitchen, and all food is covered from their wispy floating hair. It is a difficult situation!

I have a stainless curved paring knife. My mom got it at some shop in Amish country, OH. I like it to peel potatoes, or remove their eyes 👀 I use reg masking tape to label everything and will be getting that tadpole tape cutter! I have bamboo handle little spatulas and they get lots of use. Dessert Person is open on my desk. Love your recipes, and your cats!
