In Argentina we, most likely, use syrup( just water and sugar, maybe a little alcohol, o vainilla, cooked up) to soak the cake, but the rule is, "if your cake is cool, use the syrup warm, and if your cake is warm, use your syrup cold" not both at the same temperature, because, if both things are warm, you're gonna have a desintegrated cake, and if your put both things cold (the soak/syrup and the cake) the cake will absorb the littlest amount, and againg, it will taste like a dry cake (even with the filling) PS: i love all the staff at Bon appetit ❤️

it's not only in argentina, this type of syrup is pretty popular all over the world. in the usa they call it 'simple syrup'. here claire just shows different soaks to compliment different cake flavours. simple syrup is universal, but it doesn't give much flavour and obviously, doesn't compliment anything. you can use different soaks (just infuse sugar syrup with essences or other liquids) to add or juxtapose different flavours. cherry wine/non-alcoholic syrup for black forest cake, fruit soaks for more 'tropical' cakes, coffee soaks are great to compliment any chocolate cake, and as claire showed here, milk soaks are great for birthday cakes.

I was referring to the importance of temperature of the syrup and the cake itself . what i was trying to say, is that is important to know that you need to have different temperatures to make a delicius and (sorry for the word) moist cake. Even experienced bakers will have no idea how to make this, the only way is to find a recipe for caramel, eyeball the quantity she's making and replace butter for coconut oil and add in shredded coconut, not very helpful to show us how to make these cakes but not give us the information to actually make them

As a somewhat more experienced baker, I agree that even the master baker would not be able to extract a recipe out of this. Sure, it's a general guideline, but it was a great missed opportunity to not list ratios at least in the visual or description. How long does it take to say "2 cups of cream" rather than "cream"? I suspect that they know that most of their viewers are foodies looking for knowledge to talk about rather than to use in the kitchen. I recommend Anna Olson for ingredients plus directions and theory like you get here.

Ok so I went a little creepy and tried to figure it out. She said equal parts by weight of chocolate and heavy cream. At 3:19 in the video it looks like she has a measuring cup that holds two cups and it’s half full so I’m guessing one cup heavy cream about 230g. So I’m going to say 230g chocolate. It looks like 3 tablespoons of butter and based off what she threw in I’m going to say 1/2 to 1 teaspoon salt. I know you could of done that yourself but I thought I’d save some time. I hope that helps.

About soaks, here in Brazil there is a kind of cake, extremely soaked with condesed milk and coconut milk and it's served in square pieces, wraped in aluminium foil, and cold. It's super delicious.

On the subject of runny fillings, you can get away with a SLIGHTLY runny filling if you build a dam around the edge with a piped line of whatever frosting you're planning to use on the outside. You see it a lot on baking shows where someone wants to use a jam or similar filling.

I just made the caramel by looking at the amount of heavy cream she used and working backward to find the other amounts. Here’s what I think the quantities are (and what worked for me) 2 cups sugar 1 cup heavy cream 1 tbsp kosher salt 8 tbsp coconut oil 2 cups toasted coconut (one 5oz package of unsweetened coconut that I pulverized in a processor and then toasted)

@@maryamafshar9049 so-so. i combined recipes for each component (white cake, meringue frosting) using google, but i couldn't find anything like the coconut/caramel filling! so i just watched the video a million times, took notes and guessed at the proportions. it would have been so much easier with a complete recipe. i failed on the first attempt but the second attempt was okay. overall i think i'd bake it again with some tweaks and see if it's closer to what claire made.

@@realisezmoi thanks. actually i make the cake too! not exactly the same though! Victoria cake, cream cheese frosting, and that mysterious coconut filling! i tried making caramel sauce and after that gradually added toasted coconut until i reached the desired consistency. i actually made some mistakes by myself! like: i burned my caramel which turned everything into bitter taste, and the butter was not fully absorbed into the sauce which made the final result too oily. and the overall thing was not easy-spreading!! too mess :))) but it worth trying. this time i know what should i do!

I am so in love with this baking school series!! It came along at the perfect time, I just baked my first layer cake in years a few weeks ago and have had the baking bug lately.

I think that tres leches must taste better than birthday cake oversoaked because it is meant to be, but if you oversoak a cake that doesn't have the right texture maybe the result won't be as good

What is so appealing about watching Claire? I love the pseudo science lessons about gluten. I love her frustrated moment and she overcomes then. I love her and the BA channel in general.

soak: stain you can do a neat layer interface/filling with instant pudding if you mix it with about 2/3 the milk it calls for and quickly apply it before it stiffens it will also soak the surface with the flavor so takes very little material but brings a great deal of flavor AND at this thicker ratio it will glue the layers together like cement... Soaks can be applied using "pro" spray bottles if you don't like brushes... just practice a bit on a couple towels
