I know the Texans are coming for me, but just remember I'm a Northerner and this is a "classic" chili for those who know chili with beans up here. Not saying it's THE way to make chili, but it's "My Way"😅 (queue Frank Sinatra). Hope you enjoy this one!

I'm Texan and I always use beans. We were a poor family, so momma would add beans so that it could render enough to fill all of our tummies. Yummy!

Just got this in my slow cooker. Love the extra oregano touch. I had surplus fresh tomatoes, used instead of tinned toms. All combining well. Serving this evening with Indian Basmati rice and a glass of Cotes du Rhone. Thank you Bethany.

Bethany, I love this recipe. In fact, it is almost exactly how I construct a "pot of red". I'll often use venison, as I have lots on hand throughout the year. In place of tomato paste, I'll usually use tomato powder made by grinding my dehydrated garden tomatoes. Dried garden peppers are a must for me as well. The topping is a slice of raw onion and some cheese, a bit of which is paid to my tax collector, Archie. Thanks for sharing this hearty version. Truly one of the best comfort foods i can think of!

I just made this chili and it turned out amazing. I doubled it because I didn’t want to cook it again this week😊. I followed your method to a (T) and am pretty sure it’s the best chili I’ve ever made. That’s saying a lot because being from Michigan I have cooked and eaten my share of chili this time of year. I also made your Italian meat sauce, a couple weeks back and that again turned out great. I’m glad I found your channel and plan to continue watching. Don't worry about the Texans, Bethany, it looks amazing! When I make a chilli I add a couple of pieces of dark chocolate towards the end for a similar balancing effect. This coming Monday is our national Australia Day holiday and I'm going to celebrate by making your chilli. even though we're expecting the temperature in Melbourne to reach 41° celcius (about 106° fahrenheit). This recipe is very similar to mine. I put a half a teaspoon of crushed red pepper in mine and I also use a container of beef stock not chicken broth looks good though.

OMG! How did you know I wanted a really good recipe for chili? Chili is one of my favorite dishes. I serve it with a side salad, garlic toast and a nice Rhone wine or beer (depending on my mood). Anyway, I have tried I don't know how many chili recipes and have always gone back to my own creations (which is not written down so they vary greatly from time to time). But it would be terrific if I found a recipe that hit the nail on the head and this one sounds terrific - a recipe that I could stick with and enjoy time and time again. I have tried several of your other recipes and have been extremely pleased with the results. So, I can't wait to try this one out as soon as possible. So that means that tomorrow is a cooking day: I want to try your Pasta e Fagioli along with this recipe for your chili. Since I cook multiple servings at one time and freeze them, I guess I'm also going to have to get a multitude of freezer containers. Cheers.

@@Asimplepalate Hi Bethany. Well, I cooked the chili and the Pasta Fagioli soup. I cook for one so my practice is to make double the normal recipe amount and freeze individual portions. When I saw all the accumulated spices (along with the garlic that was added earlier) that your recipe called for for the chili, I had some anxiety about the dish being over-spiced. But to my surprise and relief, that was certainly not the case. The chili was fantastic. And along the same lines, I can't say enough about the soup. What a great idea about adding Parmesan rinds to the soup while it is cooking. I was prepared to buy more Parm solely for the rind (I already had sufficient rindless Parm at home) but a kindly attendant at the supermarket told me that you can buy the rind by itself. Who knew? Another thing learned as a result of watching your channel! By the way, the soup is fantastic!! So there's two winners in one comment. Thanks again, Bethany.

I always thought my chili was missing something, I think now it was cumin. Going forward I will use this recipe using venison as my meat of choice. Very similar to mine. All the same ingredients and spices, but just different ratios. The only real differences are that I use 2 lbs of ground beef and that I use the same amout of Paprika as I do Chili Powder. I might add a little bit of Cayenne or a finely chopped small jalapeno pepper sometimes. Depends on my mood at the time of cooking. LIke you said, that's the beauty of this. We can make it anyway we want. The only suggestion I would add is this. Instead of a bread, try Fritos Corn Chips. That's a big deal down here in Texas. Just pour a good amount into the bowl, stir them up and have at it!

Bethany your chili sounds delicious 🙏🏻… I’m a native Texan, my family has been in Texas since the 1850’s on my Mom’s side of the family. For the purists out there, chili is not made with beans… but I’ve eaten it with and without beans and enjoyed both immensely, especially with cornbread. Bethany try it with pintos… if you want to use a couple of bean types, use pintos and kidney or black beans. I have a Mexican cornbread recipe that is deadly good with chili if you like it (it’s not hot just spicier than plain cornbread). I’m going to try YOUR recipe, and I love the cheese you added at the end. Have you ever heard of Chili Colorado? If not, check that out. Also check out the San Antonio Chili Queens… they made chili from the 1860’s to the 1930’s in San Antonio that became world famous. Their chili is considered the standard pretty much amongst Texas purists. You’re amazing, loved to learn that you were a competitive figure skater… much respect for that!! Love from Texas❤️🙏🏻

Bethany, careful about using the word “Classic” when describing this recipe, or impassioned Texan ghosts from the Alamo will haunt your dreams (native Texan here). 😅 Seriously my go-to recipe is typed on a mostly illegible 3x5 index card that’s at least as old as my marriage (52 years) and it has beans and tomatoes (actually boiled down tomato juice😮) in it (shudder). I have a sea boat that i have in a place called Hartlepool Marina in the North East of England (google it), and we are off this Saturday as the Cod have moved into our waters here. This Chili i can make in advance a reheat on the boat, it will be perfect as our seas can be cold places here, will let you know how it go's down. Chris. @@Asimplepalate Hi Bethany Well 4am this morning we set off to Hartlepool after checking the weather forecast very well (as we had a very bad storm here in the UK yesterday) Well all went very well and we had rods in the sea by 6-30am after going 2 miles off shore. Within an hour the guys were asking for something warm to drink, to which I offered tea, but was asked about the chili I made (word had got round from my wife to the other partners) Can you believe we were having your Chile at 7-30am on a Saturday morning !! Well it went down so well I had to hold some back until Lunch. To say it was popular is an understatement !! Well we managed to catch 8 good sized cod all over 5lbs to which I will make a Cod Mornay with mine on Monday, (sure you have heard of it, it has a certain lady's favourite cheese in it, if not give it a Google.) I cook 3 different types of chili, A Texas Red with cubes of beef, no beans and a sauce made from pureed, rehydrated, toasted dried chiles, a Cincinnati style, and a standard ground beef chili with beans similar to yours. It's cool you're a competitive figure skater. I follow a couple of young women on YT who are pro skaters on Royal Caribbean cruise ships. Do you have a skating channel?

The only way to make Chile is with beans , I'm 61 and I've never heard of Chile without beans, Georgia Chile has beans, Texas Chile has beans , the best Chile in the world has beans , Chile beans, kidney beans,black beans

@Asimplepalate Like I said I don't like any beans. However I would occasionally have pork and beans but that's mainly when I'm camping or hunting. Also that's very rare and only in the winter time if I decide on them.

@ I was teasing the first 3 or 4 vids I watched where onions , mostly the sauces . I’m just not an onion fan and see so many . It’s the texture . I just purée them

I would've totally shared it! But I actually don't know the brand, I buy it in bulk at a local market, and they don't share the brand. I wish I knew! But I can tell you that I do not like Frontier's chili powder and do not recommend that one!

Chili Colorado (aka bowl of red) uses chunks of beef, not ground, and its most commonly made without beans. Ground beef chili, it doesn’t really matter. I jest with my non-Texan friends that chili with beans is southwestern beef stew. 😂 But in reality, I grew up eating chili with and without beans. I personally grew up with ranch-style beans in chili, so that’s how I prefer it. Yankees get a pass because at least you’re embracing a Texas original. 🤠 God bless you.

Love the recipe but I think all the dry spices should have been fried off with your meat to bring out more flavour

My Texas uncle said “there are no beans in real Texas chili. You darn Yankees are the ones that starting putting beans in it”! Also the real deal TX chili uses beef cubes and not hamburger. Being a PA Yankee, my chili is similar to yours!!
