I've made variations of this over the years with marginal success. A few things made Mr Mack's method stand out enough so that I wanted to try it - Less liquid. I usually put too much in creating a soupy mess - Longer cooking at a lower temp. With my way the chicken would come out dry - Added flavor/fat with the bacon. And no rice sticking to the pan to boot. It came out great. I'm hooked. No more experimenting for me - this is it.

Hey Ray Mack, I made this dish last night and it came out perfectly. I used chicken drums/legs instead of thighs. The only other ingredient I didn't have was oregano. I make this all the time, I just add frozen veggies bc the water helps with the rice, cream of chicken and or mushroom, the french onion season packet gives it extra flavor, white rice and seasoned uncooked chicken breast on top I cook for about an hour and 15 minutes at 350 or 375 degrees depending on cooked u want ur chicken, and it is a staple in my house. As a college student I have to make meals stretch and be fulfilling all at the same time.

Delicious and easy to make. It was a big hit with my family. Some recipe tweaks I made: 1. Salt pork instead of bacon. No additional salt needed. Substituted the garlic salt with garlic powder. 2. Chicken based Better than Bouillon, instead of Cream of Chicken. 3. 1 teaspoon of Turmeric, added a nice color. 4. Half cup of frozen mixed veg, added a nice touch.

My kids are coming to visit and requested my chicken and rice casserole. I haven't made it in a very long time ! I watched several videos trying to jog my memory. They all added things like red and green bell peppers or mushrooms or whatever. My casserole had simple basic ingredients. I remembered almost everything except the cream of chicken soup..gah !
