Can you please make traditional coconut biscuits when I was little my mum used to buy and I used to love I still have the taste of it when I think of them am talking about it was in 70s there are know where in super markets I wish they bring back there where crunchy golden and full of coconut flavour wish you can crack it best of luck. 😁😁😁

Gemma, this really brought back memories for me. My youngest child has Down Syndrome & Kelly is 37 now. When she was an infant she had an Early Intervention Teacher who came to our home & taught us techniques to help with her development. Her teacher's name is Shirley, and every day that Shirley came, I always had the coffee maker ready with a fresh pot & some kind of homemade treat, coffee cake, muffins, a quick bread, some kind of baked good. I got to know Shirley really well & while my daughter doesn't need her instruction anymore, Shirley is still a great friend. Sharing a cup of coffee or tea & a delicious treat, really relaxes everyone & helps people to get to know one another, and it's a wonderful bonding time. Keep on showing us your wonderful skills & recipes. A delicious treat with a warm drink, is a perfect break in the middle, or any time of day! You're the best!!!!

DO NOT forget to ALWAYS toast the nuts whenever nuts are called for!! I've been baking for 48 years and have found many years ago that the true delicious flavor of nuts come out when toasted!! It makes your recipe a MILLION TIMES better if not perfect!!

Coffee cakes should be brought to the forefront today as they were recognized as a great desert in years past. Easy recipe to follow. And the individual desert pan is a great idea. Made this cake today, and it doesn’t disappoint! Soft fluffy sponge and crunchy streusel. So yummy. I did originally click on the recipe because I thought this cake had coffee in it, but no, you drink it with coffee. Got it! It goes well with a big mug of tea too. 😉Loved this Gemma! Hi Gemma. I have seen most of your recipe videos. Your Homemade ice cream recipe is a big hit, I was Looking for Halal ice cream and since it is very difficult to find one here in Belgium, I thought to make it at home. Finally with your recipe I made many flavour such as Mango, kesar pistachio kulfi, chocolate, peanut butter, walnut and coffee with chocolate, homemade snickers (since halal snickers chocolate is not available), Côte d'or chocolate ice cream, and last but not the least Strawberry (my husband's fav). With strawberry ice cream I do extra work of cooking them a bit with sugar and lemon, let it cool and other side blending some of frozen strawberries with condensed milk and then adding to the basic recipe. It does taste heavenly. A very hearty thanku bcz Halal ice creams are not available plus we were buying Hagen daz which were tooooo expensive. So once again thanku. This doesn't have coffee in it, but you have coffee with it! In Ireland, you'd put coffee in it and have it with tea!

Halfway thru making this wonderful cake I realised I'd forgotten to get the sour cream.....I subbed in the same amount of smooth ricotta with my fingers crossed & it worked beautifully. Thank you so much for this very versatile & impressive recipe.

Great job! Thank you so much for your input! And FYI: Among the three below, you can substitute one for another and you make them at home! Butter milk is thinner so you want to use up to 3/4 in one go and adjust it to get the same consistency with mine www.biggerbolderbaking.com/how-to-make-yogurt/ www.biggerbolderbaking.com/how-to-make-sour-cream/ www.biggerbolderbaking.com/homemade-buttermilk/ (you can make DAIRY FREE buttermilk). The acid will react with raising agent to release gas to yield a good rise and will break down protein in flour to make baked goods softer. In this way, the protein won't have big holes so moisture will be trapped in. So you will get soft and moist results.

Hey I made this for my family and they LOVED IT!!! Perfect for tea time ❤ I didnt have sour cream so I used yogurt but didnt even have enough so I compensated by adding another egg. It was still so delicious. I'm not a baker at all so I was surprised it kinna....worked!?! Haha. I'm not gonna change the recipe, my family is hooked. Thank you ❤

Hi. When you change an ingredient, there's bound to be some change in the result as well. But it does not mean you won't get a good result even if it's slightly different. You can substitute the sour cream here with buttermilk. Just hold back on the buttermilk as it's thinner than sour cream, so you will most likely not need as much as the amount of sour cream in the recipe. Just add enough until the batter reaches the same consistency shown on my video.

Coffee cake is SO GOOD that I've enjoyed every piece down to the last crumb for decades now. Wonderful for breakfast or to offer guests in between meals as a light but sociable food to share. I'm curious if anyone knows of a similarly flavored cake elsewhere in the world. It seems uniquely American but correct me if I'm wrong.

This version is pretty American for being "coffee cake" that's enjoyed with coffee, but without coffee in it. In Ireland, there'd be coffee in it and we'd have it with tea!

The coffee part does create confusion. It's assumed to contain coffee rather than being the traditionally accompanying beverage. Same with English tea cakes or tea sandwiches having no tea in them at all.

In general, for a convection oven, you need to lower the temperature by roughly 25F (15C). As said in my written recipe TIPS, My GoodCook 9 1/2 inch Angel Food Cake Pan is the secret to not only the beautiful finish to this bundt-style cake, but it’s the depth of the pan that allows you to successfully layer up the cake and streusel. It holds roughly 9 cups of batter. No recipe fills up the pan full , always about 3/4 full. You can use an 8*8*2 square pan or an 11*7*2 rectangular pan, they both hold up to 8 cups. You will need less baking time since it will be shallower than mine. Hope this is of help and you get on well!

Hai,I wanna ask if I don't have maple syrup can I change to rice syrup/honey/vanilla syrup?

Yes you can 🙂 As long as what you will be replacing is the same consistency as maple syrup

Ms. Gemma, my bundt pan does not have a removable bottom so do you suggest generously oiling the pan so nothing sticks? Thanks!

Yes, that is correct. Grease then side of the pan with butter, and sprinkle it with flour before pouring the batter into it. I hope this helps.

You can use honey, golden syrup or liquid jaggery instead.
