In this video I will share with you how to make a French classic Opera cake. It is known as the king of chocolate cake. This cake has many layers. The basic one in my video will have 8 layers from top to bottom. It's pretty quick to make and really not that hard. You guys should try it.
INGREDIENTS
For 14cm square mold, you can cut into 8 smaller cakes.
Joconde Biscuit:
2 large eggs
50g icing sugar
65g almond powder
2 egg whites
25g caster sugar
14g unsalted butter
16g all-purpose flour
20g semisweet or dark chocolate
Coffee syrup:
80g hot water
5g instant coffee powder
20g caster sugar
5g Kahlúa, Brandy, Cognac, Grand Marnier, Cointreau or Rum
Chocolate ganache:
100g heavy cream
90g semisweet or dark chocolate
12g unsalted butter
French Coffee Buttercream:
2 egg yolks
50g caster sugar
20g water
120g unsalted butter
4g instant coffee powder
4g water
4g Kahlúa, Brandy, Cognac, Grand Marnier, Cointreau or Rum
Chocolate glaze:
90g semisweet or dark chocolate
15g oil
Writing chocolate:
27g semisweet or dark chocolate
3g oil
