Hey guys! Love the videos, I'm a fan from the UK, and I'd love to try some of the recipes you guys create, the problem is it's extremely difficult to get a lot of the equipment and even just the rubs you guys use, so my question to you guys, could you put out a recipe, for some authentic American BBQ staples we could easily do at home (preferably a conventional oven) (maybe even a homemade authentic sweet n smokey BBQ sauce?!) Even the rubs would have to be 'home made' though - I've tried myself but I just don't have enough knowledge to get them right, we can obviously easily get all the regular spices and combine them ourselves, it's just really hard to get a hold of all these amazing ready made specialist brands you guys do, unfortunately it's just not that big over here. It would be absolutely amazing if you could! I understand I'm asking a lot but it would mean a huge huge deal to an American style foodie stuck on the wrong side of the pond, Much love! Scummy!

You guys have made me look like a total rockstar to my friends and family. These recipes are consistently amazing and the videos are shot and edited so well. Great videos chef! I also cook alot of bbq and i just have to ask, have you ever thought about making your own rubs? I think it would be awsome for the viewers who find it difficult to purchase rubs, and will be more intruiging to learn about rubs as well as cooking the different proteins. Thanks for the videos i feel like watching these make me more motivated when i go to work. Looking forward to your reply!

there times like this that Chef Tom Impresses himself lol. I like the brine and then buttermilk soak. only thing I'd add to the dredge is some cayenne pepper for some more heat profile

I combine my brine with my buttermilk and it's really good. Just add salt and spices to buttermilk. Let marinate for 12 hr. 2 at room temp. Dredge wait 20 mins. Fry.

Hey Chef Tom, do you know any good ways to get a buttermilk effect without using actual milk? I'm allergic to dairy and would love to try making this, but while it looks delicious I'm not sure if it's literally "to die for"! Can you just do the flour mixture after the first soak and skip the buttermilk, or use something like Almond or Soymilk instead (I'm so sorry if this is a sacrilegious question)

Loved the techniques. Exactly what I love to do too so I'm happy to see this. Few things I would add to this: 1. Hot Sauce in the buttermilk gives the chicken a nice kick. 2. Cayenne and in the flour adds a nice kick. 3. If you like it extra crunchy, double dredge. Flour - buttermilk-flour. Then rest and fry. 4. A light brush of hot sauce or a drizzle of honey as soon as it comes out of the oil and onto the rack adds a nice dimension. Make sure it's light though since you don't want to lose that crispy goodness. :) :D

Seems like an extremely long time to brine small pieces of chicken. Would it not become too briney tasting? All other recipes are just 4-6 hours in buttermilk, without the 24 hour brine. Other than that, it looks delicious! Who doesn't love fried chicken!

They essentially do two different things. The brine itself infused some flavor while the buttermilk works to break down the chicken to make a more moist end product. Thanks for watching!
