Oh man! I swear Larry I was craving hush puppies but I'm in AZ where they aren't popular. I bought a mix, fried them up and they were delicious! I added fresh jalapeños, onions, garlic and shredded cheddar. SO GOOD!

As a teenager, I worked at a sit-down fast-food restaurant called Skipper's. We sold jalapeno hush puppies and they were pretty popular. Sadly the franchise folded years ago. I've tried recreating the hushpuppies a few times but could never quite get it right since they were already premade when we got them. Your recipe might taste close if I add the chopped jalapeno into the mix.

As a Canadian, Hush Puppies are rather unknown but they appear to be a variation on corn bread (which I do make and enjoy) so corn meal (not corn flour) lurks in my pantry. Hot sauce?...right on AND I grow my own Jalapenos (actually I grow hot peppers as a hobby, including the "STUPID HOTS") BUT Lord have mercy, you don't want to use them here!
@carlh-thehermitwithwi-fi6793 ай бұрын
i love cornbread. Always have. ALWAYS had a box of Jiffy in the pantry. Went to go buy two, as they were on "sale" a few weeks ago. I have gotten into the habit of having to read EVERY LABEL NOW My heart fell when i got to the line on the Jiffy box that said "may contain bioengineered ingredients" It was hard to take, easy to put back. Still, lost another iconic supplier from my childhood. So i bought some straight up regular corn meal and made some hoecakes from scratch (i can do that) But what a shot in the gut that yet ANOTHER company I always relied on has to be ignored because it could hurt me. It's getting tought out there to keep removing companies from my personal financial planning.

I was thinking that you put chopped roasted jalapeños in the batter mix like when you normally put onions in the batter. Both would be good. I'll have to try that & skip the hot sauce instead of milk.

Larry , nice recipe , but 1 thing I'll change is I don't like jiffy or sweet cornbread, I will use yellow corn meal mix non sweet , here in s/e Kentucky we all eat non sweet cornbread. Big chunk of raw onion on the side, buttermilk to drink , mmmmm.....
@5riversdeep6283 ай бұрын
Searing the jalapenos is excellent advice. I don't have a range hood, I just have a basic propane stove top built into the kitchen counter. I wanted to fry up some jalapenos and onions one cold winter day, to top a burger with. I sliced up the Jalapeno and mixed it with the onion and started frying. The next door neighbor was about to call 911 when he saw me outside, rubbing my own face into a snowbank. He came over and asked what was wrong, and all I could say was " I fucked up, dude". Didn't realize frying sliced jalapenos without proper ventilation is like macing yourself.

That looks great, I love spicy food, but it must be Franks for me, hot sauce especially Franks does have its own flavor. Some are just hot without hearty depth and tang.

Something else to try. 30 some years ago I lived and cooked at a small tiki fish joint. When I started I ask for house recites There were non, just do what you can, so I did just that. Conch fritters, conch chowder, coleslaw, and so on! Fridays we had an all you can eat fish fry, can't do that today on a working man's pay. I snapped at one of the waitresses one evening because she kept ordering hush puppies. Then the customer wanted a whole basket of just hush puppies. I snapped at her again! Then she explained that he had no interest in the rest of the dinner of grouper, all he wanted was my hush puppies. Well, he got all he wanted from me, and for weeks after. Turns out, he was from coastal NC, so knew his stuff. Not that I didn't eat my fair share, with my home grown cocktail sauce. HINT! Ketchup, which I normally do not like, finely chopped celery, garlic, white pepper, and oh yeah, good old Frank's, as I remember! Now, I must have chopped a ton o produce each week in those times, because, with the addition of finely chopped onion, the garlic and celery to the mix. I was up to my elbows in 6 gallon buckets mixing the hush puppies. We almost always sold out early, so had to make more for the regular weekly menu! There might have some chopped parsley, and a tad??? Not all of my secrets at one time

Those do look good. I know some people swear by Jiffy corn muffin mix, but I would personally use either Martha White cornmeal mix or White Lily cornmeal mix. And dice up an onion to add to the hushpuppy batter. Yum yum.
@stapuft3 ай бұрын
Never use corn MUFFIN mix, that crap is LOADED with sugar, and GOOD cornbread\hush puppies, DONT have sugar in them. Use corn BREAD mix or just plain corn meal.
@stapuft3 ай бұрын
Roasted jalapenos go REAL GOOD when added to the hush puppy batter, just dice em real small, and mix well, if you are feeling adventurous you can also mix in some cheddar cheese.
@chandlee39683 ай бұрын
I’ve eaten this style hushpuppy but I think they are too dense, it needs the milk for a soft interior. I also grate a small onion and dice a jalapeño, since I keep cornmeal in my kitchen, buying Jiffy mix is a wasted expense, I just use two tbls sugar to my batter. Like I said, mine is fluffier and not as dense but some people like it your way too.
