When I was around 6 in the early 70s living in Cocoa Beach I would spend afternoons on my dock fishing and whenever I got a little hungry would take two garden rakes and scoop up 4-6 oysters right off the end, shuck 'em (always from the front - it's much easier), and have myself a nice rich snack. We would go walking in old tennis shoes in the canal we lived on off the Intercoastal (the Banana River) and pick up oysters for cooking dinner. The canal and river were chock full of them - to this day I don't even like going in a swimming pool without some protection on my feet. I have quite a few scars on my feet from my childhood in Cocoa Beach. I went back in 2006 and talked to the current owner of the house my family had and he said you can't eat anything out of river now because of the industrial pollution. I also noticed the mangrove "islands" in the river (former homes to crocs and raccoons) were all dead. Damn shame to see a fond part of my childhood literally dead. But at the time it was a fantastic continuing gift from Nature along with the sweet Sailor's Choice fish and the blue and rock crabs which were constant guests of honor at our dinner table...

Lived down by the gulf for 17 years and got 60 lb sacks during the fall and winter. Loved to eat them with saltines and Crystals hot sauce. I miss that so much!!!

I pick them myself and let them sit in clean water to “cycle” clean themselves out a few freshwater cycles, after a good washing and brushing. Good video.

One little tip for easier cleaning. Use a pressure washer (if you have one) and clean them inside of a milk crate so draining isn't an issue. Agreed with others on the use of a proper oyster shucker knife, but of course not everyone may have one at first.

Try a bed of rock salt in your pan, stabilizes the oyster while moving the pan and cooking. Oyster shucking is a skill, take some time at the dock and learn from those guys, you'll be surprised at how easy it becomes for even the tightest shells to be opened. Thanks for the video

I found you can take that long oyster knife to a grinder cut about half of it off you will be left with a wide end grind it sharp with curved edges, it will give more leverage for the twist and if you make it a little less than 3" long there will be less chance of ramming it thru the oyster into your hand also get some gloves that guard against cutting your hand, you only need one on the hand holding the oyster, hope this helps............stevie from mobile al

After watching and reading the comments I have to wonder how many of you find your way home... My Family has owned an oyster on Hood Canal for longer than I have been alive. Let me try and share how to open an oyster, every time, any configuration, without destroying the meat inside. First, He has the top and bottom of the oyster correct. The rounder part goes down. Being right handed, as he is, hold the oyster in your left hand as he is but turn it around so the hinge is away from the knife. At about a 45 degree angle place the knife on the top edge of the oyster at the seam. Wiggle the knife gently as you push it forward. When it enters the shell keep the point on the lower half of the shell After entering a bit, about an inch or less, turn the knife counter clockwise and gently push down on the knife handle. This will open the oyster enough for you to slide your knife along the bottom shell and cut the mussel. When cut you can easily remove the top half of the shell and cut the upper mussel returning the meat to the curved bottom shell with all the juice and meat ready for cooking...

one thing I always do before prepareing my oysters, with a nylon brush and a bucket of water, I scrub all the dirt from the shell. Most of my oysters are eaten raw or steamed with nothing on them. I want to taste the oyster not the damn cheese.To each his own.

Use the old "eagle beak" can opener to open oysters. I have NEVER found one that it won't open. What you need to do is get a real oyster knife. That cheap thing you are using is why you are having problems. A good knife will have a curved end to give you more leverage. Get some real knives and you will see the difference.
