Speaking of oysters in the south, ive heard that you can only harvest them during cold weather months, because of some type of bacteria. Since relocating to Lowcountry in South Carolina, Oyster Roasts are only done during winter months. Growing up in Utah, I could get raw oysters year round, but obviously imported, from who knows where.
