How do you clean the surfaces immediately around the blade edge? Surely, you can clean those properly with the blade still installed? When I disassembled my blade and ran a cleaning rag around the blade guard, I was amazed how much food remnants I still picked up even after a thorough cleaning and sanitizing.

Could you tell me, what kind of fat should I use for a machine like this, is that every time I cut cheese it becomes more difficult and I think it froze and does not walk😔
