They live in extremely cold and high altitude. A protruding nose will get a frost bite... That's why they have snub nose.

So before they “evolved” these amazing stomachs that can digest the toxic moss they eat, how did they survive?

It was most likely a gene mutation that gave one of them the advantage over the others to consume the toxic moss. Then survival of the fittest comes into play and that monkey is the only option to mate with
