Clotted cream or qeymar or kemer is a traditional iraqi breakfast. It is made from buffalo's milk. It is similar to mascarpone cheese but sweeter. Iraqi would eat this in the morning especially in the occions and when family get together with a special bread called "kahi" which is similar to puff pastry along with honey or date syrup or fig jam and of course aside of hot tea. Since the buffalo's milk is not available, I am using heavy cream instead. I have seen many recipes and videos where people use different methods and ingredients where you end up with a lot of liquid beneath of the clotted cream. I have came out with this method where you end up with plenty of clotted cream cream and very little liquid. I think the method is the best one so far in my opinion !
Note: I will make different methods to make clotted cream so you can decide the best for you!

كريم متخثر أو قيمر أو كيمر هو إفطار عراقي تقليدي. وهو مصنوعة من حليب الجاموس. يشبه الجبن مسكربون ولكن أحلى.يتناوله العراقيون في الصباح خاصة في المناسبات وعندما تلتقي العائلة مع خبز خاص يدعى "كاهي" وهو مشابه الفطير المشلتت مع العسل أو شراب التمر أو مربى التين وبالطبع مع الشاي الساخن. بما أن حليب الجاموس غير متوفر ، فإني أستخدم كريم ثقيل بدلاً من ذلك. لقد شاهدت العديد من الوصفات ومقاطع الفيديو حيث يستخدم الناس أساليب ومكونات مختلفة حيث ينتهي بك الأمر مع الكثير من السائل تحت القشرة المتخثرة. لقد فكرت بهذه الطريقة حيث ينتهي بك الأمر مع الكثير من كريم المتخثر وسائل قليل جدا. أعتقد أن هذه الطريقة هي الأفضل حتى الآن في رأيي!
ملاحظة: سأقوم بعمل طرق مختلفة لصنع كريم متخثر حتى تتمكن من تحديد الأفضل لك!
I made a small amount of clotted cream. If you double the amount of the heavy cream, I suggest you to use bigger tray in order the water would evaporate faster !
Ingredients:
2 cups of heavy cream
Small thick tray size about 12" diameter
Steps:
-Pour water in a big pan.
-Pour heavy cream in the tray.
-Put the tray over a pan and over low heat. The water should be simmering. Make sure there is enough water in the pan. Also make sure there is a small opening between the try and the pan.
-Cook for about 4-5 hours or until the top of the clotted cream started to become a little yellow and most of the water is evaporated.
-Turn off the heat and leave the tray over the pan until it is completely cool.
-Refrigerate for one day or two.
-Scope the clotted cream with a big spatula and top it with remaining liquid if you like!

أنا استعملت كمية صغيرة من كريمة الثقيلة. إذا قمت بمضاعفة كمية الكريما الثقيلة ، أقترح عليك استخدام صينية أكبر لكي يتبخر الماء أسرع!
مكونات:
٢ كوب من الكريمة الثقيلة
صينية سميكة صغيرة الحجم حوالي ١٢ انج قطر
خطوات:
- صب الماء في مقلاة كبيرة.
- صب الكريمة الثقيلة في الصينية.
- ضع الصينية فوق مقلاة وعلى نار خفيفة. بحيث لا يغلي الماء
- تأكد من وجود كمية كافية من الماء في المقلاة. تأكد أيضًا من وجود فتحة صغيرة بين الصينية والمقلاة.
-اطبخ حوالي ٤ الى٥ ساعات أو حتى تصبح الجزء العلوي من الكريمة المتخثرة صفراء قليلاً و يتبخر معظم الماء.
-أطفأ الحرارة واترك الصينية على المقلاة حتى تبرد تمامًا.
-ضع الصينية في الثلاجة لتبريد لمدة يوم واحد أو اثنين.
-اجمع الكريمة المتخثرة مع ملعقة كبيرة وضع السائل المتبقي فوقها إذا كنت ترغب!
