You can also make clotted cream in microwave at medium heat,check every 5 minutes,time altogether 20 mins,then put in fridge to set for at least 8 hrs.I live in the UK 🇬🇧 and alot of my friends have tried it the way I do

Clotted cream is a British delicacy, and I am a dedicated Anglophile. Traditionally, if I remember correctly, you keep the yellow crust uppermost. Cut it into pieces to fit the dish you’re putting it in and using a slotted spoon or slice of some kind, to layer it up very carefully, preserving the crust uppermost in each piece/layer. Then when you cut into it to put on your scones you can see the distinct layers. Modern commercially made clotted cream in England doesn’t always or even commonly have layers. But it used to when I was a young woman. And in traditional clotted cream making the layers were considered a mark of quality and delicacy. You can fold it all over to move it from the dish it’s baked in of course but it’s a shame, and I must confess, watching you do that made me wince! ;) Great that you have the patience to make it though!

I’m not sure how many videos I’ve watched of bakers, both home-bakers and professionals, prepare clotted cream, but it was a very many, and the only ones I ever saw use the electric mixer to beat together the crust with the baked cream underneath were… British! I live is South Wales .. just on the border of England, clotted cream is absolutely delicious 😋 we eat it with scones too but I mostly eat it with strawberries & sugar 🍓😋 or over Christmas with a British traditional mince pie, which is like apple pie but with dried fruit like sultanas & raisins 😋 they’re only usually sold over Christmas 🥧 .. aw your clotted cream looks perfect 👌🏼

Amy I know that I told you that I live in East Texas but I not a native Texan, I am originally from Europe, born and raised in Germany. I met my hubby over there while he was in the military and we married in Germany many moons ago. We traveled all over Europe while we were stationed there and yes the Britts love their clotted cream! Kroger has a section in their grocery store with grocery items from England, things you can’t normally find anywhere else and I am sure that Amazon has clotted cream as well because they have groceries from all over the world. My family is sort of international with myself having married an American (55 years ago) and others in my family married a French man, an Italian and a Brazilian! 😁😁😁

Scones , clotted cream and preserves. You cannot beat it. I have some this weekend. Cornwall has a big factory called “Roddas” where they make the cream. Devon and Cornish people place their jam & cream differently! So glad you love it Amy. We do. ! You did a perfect job. 🇬🇧🥰

Clotted cream in the uk has the yellow crust ontop and it is normally eaten straight out of the tub ontop of scones with jam, you would not beat it to mix up the crust, otherwise you will end up with butter. Clotted cream is naturally sweet, no salt or flavouring are normally added for those that have asked. Please dont ruin the cream by beating it, the crust is all part of the experience! Great video on how to make it though! In the UK, heavy cream is called double cream.

Also I like to do more like a thinner pan, shallow. 1.5-2" so there is more of the thick cream

@@amyslouisianakitchen also one more thing after it's been put in the oven for so long, very gently move it to the refrigerator once it's cool to room temperature. Try not to disturb the milk like the old pioneers used to do with the butter. Gently put it in the refrigerator and leave it an entire overnight. The next day the clotted cream will be even thicker.

Happy New Year! I just adore clotted cream and scones. When I went to England and was first offered clotted cream- I politely declined as it didn’t really sound like something I thought I wanted to try. My friend said- oh honey you’re going to love it. And I did! I’m so glad to see your video. I’ve been making a mock clotted cream since I’ve only found it in a specialty market one time. I’ll definitely be trying this. God bless you Amy! So excited to try this tomorrow! I had it in England a few years ago and tried to make it. I even got the unpasteurized cream from a local farm only to make it and then find out the cream was bad. So I’m thrilled I found your recipe and can use the normal cream we have in the store! Making homemade English scones with the leftover milk!

Interesting watching this video. I live in Devon and can verify clotted cream is yum! It's not mixed together here though as the crusty top is part of the deliciousness... Oh and cream first then jam, unless you're in Cornwall of course...😊

Hi Amy: Thanks for the great demonstration. I've noticed in baking other things that my oven doesn't seem to heat as hot as it should at 180 degrees. Can I increase the heat to about 200 or 210 without ruining the clotted cream? Will the length of time change with the change in temperature? Had it when I was living in Turkey. The Turks make a dessert out of pumpkin doused in a sugar syrup with chopped walnuts. Turks call it kaymak. Delicious.

Clotted cream can be frozen for up to three months in smallish containers. Any longer and it gets a little crumbly when defrosted. If that happens, add it to a cheesecake mixture.

She said 1-2” of cream...she did 2”, so if you want less, just put in 1” of cream. Just watch your baking because it will turn golden quicker.

You don't t make butter by cooking..If you over whip/ whisk Cream/ double cream you'll get butter..

Yes you can put it in jars but I do not know if you can can it. You can freeze it though and it thaws really well. Also you can reduce the amount of cream to make less. I hope this helps😊

I also baked mine at 180 degrees F. If your oven will go that low do it. If not do maybe 10 hours on 200. It will all be good💜

Put that spoon over here so we can taste it!! Back when Costco came here (Kelowna, BC, Canada) they carried Devon Cream, which was a bit like clotted cream, in a pint jar. Then they stopped carrying it. We can get it in a little tichy jar that's barely worth buying. We pronounce Scone like the English fellow. I think it would be tasty any way. I have cream in the basement fridge and my son is angry with me cause I bought so much. Ha ha ha, little does he know.

Or preheat your oven to 320 degrees and place the cream in your oven, then turn the oven off. DO NOT open the door for 10 to 12 hours. No worries about the oven shutting off. Less complicated than trying to cook it all day.

We went to a place in CO that serves high tea since they advertise it includes clotted cream. Imagine my disappointment when I tried it to find it was just ordinary whipped cream! Lame. I know what clotted cream is, and that wasn't it.
