To make approximately 2 cups of clotted cream:
Preheat oven to 175°F (80°C). Pour 1 pint of heavy cream into a shallow 2-quart baking dish. Let the cream cook in the preheated oven until it thickens and a golden crust forms on top -- usually 12 hours. Cool for 1 hour. Cover and refrigerate for at least 4 hours. Use a spatula to scrape the crust and the thickened cream below it into a jar or a bowl. Delicious on scones, fruit, and you-name-it.
