What food fuels the slum that never sleeps?
Pasil, home to the Philippines’ oldest port and an important fish market that the entire Cebu city revolves around, is buzzing 24 hours a day. Whether at midnight, pre-dawn or the morning rush, there are always people looking for a filling meal for cheap.
Around the clock, these food vendors are cooking up incredible dishes using offal and offcuts like brain and liver or cheaper fish to create belly-warming dips and soups. And these residents have each other’s back, providing freebies like a gravy that allows unlimited dips to a seafood grilling service at no extra charge. This slum’s food economy is out to help those with little to spare.

Just for clarification, pig brains is not a food for the poor people in the Philippines. Its price is actually close to pork meat , so you can't consider it for people . When I buy ( goto/ a variety of porridge) its a little bit pricey and not always available even though its always on the menu . Pig brains are usually eaten with those acquired taste , and not a lot of people like it . Rich or poor people it depends on their preference , so we don't eat it because we are poor but some of just like to eat it .

Exactly. Dinakdakan has pig brain but it'a not considered poverty food, but BEER food. You even start to see this in more "proper" restos

During my younger days in Cebu City. I used to go this place to purchase fresh seafoods and eat their famous cuisines. This is famous in my city. For me it is not a slum food. But it's a delicacy for us as a pure blooded Cebuano. And I tell you frankly, It's not dirty food. Even now in my forties, I still hang around and eat there.

my experience with tuslob-buwa, I already ate about 6 or 7 puso, then I asked the vendor what the ingredients are, I was stunned when she said pig brain, no words came out of my mouth. Paid for my meal. Got to my room. Haven't eaten it again and that was about 6 years ago now. I do admit though, it tasted soooo good. watching this reminded me of the aroma of when it's cooking, mmmmm...

Sorry if similar comment has been made before -- but the rice cake in woven pandan leaves, we have it too in Indonesia and Malaysia, we call it KETUPAT. I'm actually giggling to watch this eaten with a pork dish, because in Indonesia ketupat is normally associated with the Eid Fitr celebration!:)))

Hello. Here in the Ph, we don’t use pandan leaves to wrap the rice cakes. Instead, we use young coconut leaves.

Nice to see CNA specializing in stories of poverty. Every Singaporean who has a rough time, business or school troubles, divorce, etc. should watch this series and regain hope in himself that yes, his personal failings are not the worst in the world.

So CNA must show poverty porn, to make other people feel better? I often say that majority of Filipinos are like Diogenes, without them even knowing it. Outsiders try to box Filipinos to their concept of money. A lot of Filipinos are happier (Quality of life) even with our current Standard of living. We are communal, we love to be surrounded by people. Even if you think that the area looks "poor", you will be surprise of how rich in happiness people are there. Also most of these vendors might look poor to you, but they earn way more than average wage in Philippines. Some are just contented with their living condition. A crowded place like those means cheap rent for business and more customers. Also food business is really time and physically demanding, even there in SG.

@@snarveien1853 CNA is a Singaporean public service. Its first duty is to Singapore. I'm not sure the average Singaporean will see things the way you describe them. As a first world nation, career and success comes first. Now, of course this entails pressures that may deal blows to one's self-esteem, and that is where Mediacorp comes in. You can't downplay how important this is for SGers.

I rode by this place when I was living in Cebu and never went in there. I think a good Sisig needs pigs brain. But I have no idea cuz I was just an expat. Cebu Lechon is also untouchable. I can't eat Hawaiian Imu pork anymore because I know what Cebu Lechon tastes like.

When I was young I thought we were poor. Then I started knowing first world people who only goes on vacation for a few days a year. Working sixteen hour days. Now I'm older i realize there are so many good things about my country. We'd go to the beach every weekend. Even everyday when we want to. Love doesn't require a big bank account. And food is great and cheap.

Ahhhh, the famous "Larang" soup. Jeez, I haven't had one of that for a long time. Best eaten between 4-5 am when the fish is still fresh from the port (you can actually still smell the sea from the fish), also when you are heading home after a night out drinking. haha. Doesn't cure hangover though but will lessen the headache the morning after.

Tuslob Buwa. And do you know what’s the best thing about this dish? That is…that you can double dip 😂. I Can wait to experience or even make this dish, although I’m not sure what’s the exact ingredients in that palm leaf baggie. And I just searched it and it’s called pusô. Great I now have the ingredients, but don’t have any palm leaf to cover it with, more so how to make a baggie out of it 😅

They call it PUSO. Cebuano ancestors come from Sumatra under Srivijayan Empire that's why they also have Babi Guling.

I was born In cebu not to far from pasil. Next time I fly home for a holiday im definitely going to visit these food places. Pasil was known as a very bad & dangerous place back in the days.

Many central provinces, and even some places in northern mindanao, refer to soy sauce as "patis" for some reason. Fish sauce, the real patis, is not very popular as most people prefer the salted fish called ginamos.

@@ReyLamurin That's weird. Patis literally means sauce from fermented fish. I'm a Mindanaoan myself and have not encountered anyone referring soy sauce as patis. Toyo is a known condiment that we barely mistook as patis.
