That was a very good attempt at a banh xeo. Good job on adding beer to it. Any carbonated liquid will make it crispier. My mom used to add coconut soda to her batter.

Just want to say Tacu this week has been one of the hardest weeks in all my 31yrs I was struck down with a nasty viral infection combined with anxiety attcks almost passing out on a daily but the only thing that made me feel better was seeign your videos thanks for being the kind hearted legend that you are your super easy to watch bro & inspiring. I love seeing you in this part of the world carrying a stubbie instead of a can of beer lol I hope you can make a stop in Australia next Ill be deffinetely coming to meet you if I can. I've never been out of the states, but I've always had chickens! Non-refrigerated eggs is the usual. If you have to refrigerate your eggs, they have been through a wash that removed the natural, protective bloom and/or are old! That clam opening technique was awesome! I will definitely try next time I forage some cockles!

Hey Taku I am impressed with the bánh xèo. As for the fish sauce, you may want to add some sugar. It would give it a little sweet, salty, and sour taste. My wife’s recipe for fish sauce is 1/3 fish sauce, 1/3 lemon juice, 1/3 sugar. You can also add some chopped garlic and chilies.

One of my favorite places you two have visited was the island in Alaska I believe, the ranger station with the hot springs that flowed through the “pool house” such beauty and peace in that place

I love your channel, dude! I recently got into it a few weeks ago and have been binging it, haha!! Also, as someone who's worked as a head cook, and who cooks at home, your channel has helped me find new recipes and re-discovered my love for seafood. Taku, to get it crispier you need to double the amount of oil and put a cover on top (doesn't need to be sealed but enough so the top side of the Banh Xeo will cook as well). After 4 minutes, take off the cover, fold the Banh Xeo in half and depending on how crispy you want it cook for 30-60 seconds each side.

This exactly. It is also okay to turn the heat down almost all the way. This allows more time for the Banh Xeo to get even crispier without overcooking the toppings.

Less oil can be better for your health in dishes that absorb it though, his is still crispy just not next level crispy

yah, I use less oil and heat on high. maybe even after its cooked. very hot pan will do the job

Future tip Taku! For the banh xeo dipping sauce, i would recommend also adding some white vinegar, coconut juice\soda, minced garlic and lots of sugar! It will take your dipping sauce to another level !

Back home in WA, we use cornmeal, and yes it definitely works. The sand left in the bottom of the bucket is amazing.

My family is from Central Vietnam. Growing up, we ate Banh Xeo with a Peanut sauce, and we eat it with a fork and knife. Vietnamese people from other regions wrap the Banh Xeo up with springroll wrappers, and then they dip it into a Fish Sauce.

Hey Taku, been enjoying your and Jocelyn's travels for a few years. Not one to comment, let alone comment on the comments! Purging clams and other filter feeders is awesome! I prefer to use ground black pepper or fine ground white pepper as it accomplishes the same thing, and imparts pepper flavor! Writing you from the Maisian Coast (Midcoast Maine) which is my mission - get Americans to eat all the seafood that we have here. Peace and Love!

Great video! A little tip if you want a crispier texture on the banh xeo add ice cubes to the batter mix. Gives the frying part a quick shock.

If you're still in NZ you should check out the canals in Twizel in the south island, some of the biggest trout in the world are caught there if a bit of freshwater fishing interests you

Nothing like a feed of Pipi. There are a variety of clam called Tuatua that make a good kai. Happy foraging Taku, I am jealous as hell watching from cold rainy Washington. 🤙🏽

🌴Hey you two , clam’n and Banh Xeo , yum the wifey poo makes em with shrimp and boiled pork belly , but it’s fresh spring rolls today with peanut sauce 👍🏼, glad you took us shopping it’s always neat to see what’s happening on the other side of the world 😄 , so I was watching some fly fishing vids were they were catching Kings on the flats in New Zealand , heck catching any fish on the flats fly rodding would be fun ! It was so great having that fresh garden there, can’t wait to see your next video, 👊🏼✌🏼

A cool dish for the cockles or pipis we call them here in New Zealand is dumping them in boiling water and let them crack open and eat them with sweet and sour sauce. You also need to try a boil up and a hangi while your here that’s a staple dish in Aotearoa-New Zealand in Māori

As soon as I saw the golden sand I knew you were in the Abel Tasman! Marahau and Motueka, you're right on my doorstep! Plenty on kingfish still around Tasman Bay at the moment. If you're still here you need to go fishing at the "Spat Farm".
