I definitely find that problem with cakes and pastries. Most dishes that can be refrigerated are fine, but when I make a cake or something stored at room temp I often end up kind of forcing myself to finish it after a few days, so it isn't wasted. Some smaller cake recipes would be great!

It's lovely. The caramel notes are unique. Nothing else tastes quite like a coca cola cake. A local version of this recipe pops up where I live every now and then. It's nice to see Glen has a version.

I often use Sprite as a liquid when making yellow cake while camping. Although that's usually using a boxed cake mix. I bake it in a camping dutch oven using hot coals from the campfire.

I have my grandmothers wnderful scratch German Chocolate cake that is the best I have ever tasted. She had 2 Warm Morning wood or coal burning cook stoves in the early 1900s, up until the Electrifi action of America around 1932, when they had to buy an electric stove to meet the requirements for electricity to be run to their farmhouse north of Memphis, TN. Mother said Big Mama didnt want the electric stove, so moved one of her Warm Morning stoves out onto the large, enclosed back porch, to make room for the new electric stove to be set up, but continues using her newest W.M. stove for ten years, or so, longer. The cookbook that came with that last W.M stove has some wonderful very old recipes that are excellent. Those are wonderful cook books to be on the look out to find.

I would also love more recipes on "the cake for two" theme. Question: salted or unsalted butter? Being Danish we always use salted butter. But as I have learned (the hard way) that is not the norm elsewhere.

Ah the salted / unsalted butter problem. Many cooks / internet chefs make a lot of noise about this. If this was 1622, 1722, or 1822 when people made butter at home and salt levels varied wildly; not to mention that salted butter often had to be soaked or rinsed to remove salt before it was edible - the argument between salted and unsalted butter was valid. In 2022 when most of us buy commercially prepared butter, salt levels are regulated and the difference between salted / unsalted is negligible. In Canada (and this holds for the USA, and probably Denmark as well) a 1 pound block of salted butter contains 1½ tsp of salt. So for most recipes - this one included - where it asks for 1/4 cup of butter, using salted or unsalted won't make much of a difference in the finished baking: using salted butter would add 1/6 of a teaspoon of salt to the cake, ***Unless of course you are hyper sensitive to salt, or have some ailment that keeps you on a strict no salt diet.

@@GlenAndFriendsCooking I totally agree, the salt content in butter here is so low I do not change the receipts. Maybe we even have no salted butter, unless special salted ones here' ... usually I have sour cream butter here, which tastes great with Bread, with anything. I do not taste a different to the unsalted 'sweet cream' butter which is a bit harder to get, in a cake. * mild sour butter* direct translation, it's with lactic acid bacteria, not sure if that is similar in US/CA.

Loved Glen's answer and it helps me a lot. If it's a large recipe (in U.S.) I'm making and it does not specify if I should use salted/unsalted butter I check to see if salt is an ingredient in the recipe. If it is, I use unsalted butter. As a side note: I am very sensitive to the taste of salt so this may or may not be helpful to you. 😉

Coke cake or Coka Cola chocolate cake with coke icing was in the regular rotation in our house growing up. Mom used whatever caramel colored soda she had handy - diet or regular, flavored it didn't matter. Most you can't tell in the final product except for root beer. Now I want Coke cake! I can't bring myself to heat up an oven for a small amount of cake, cookies brownies. So I'll made a normal amount and freeze half for a later dinner party. However this is a great method for a fresh cake 👍🏻

I‘d say the only reason to try is if you only have Coke Zero at your house anyways. Saving about 25 kilocalories on a whole cake doesn’t really make much of a difference.

Lots of butter. I won't be making this one often BUT I will be making it. Sounds delicious. I might try baking a cake that small in my Instant Pot on the "bake" setting. That would use a LOT less energy. I was going to ask you use grams and milliliters in your recipes, BUT, when I checked I notice you already do. Thanks. Update from future me: it does work! You just gotta add the sugar that would have been in the coca cola you add here, and replace the cocoa powder with extra cake flour if you want vanilla, not chocolate, and you're in business!
