En este vídeo preparo 2 cocas de brioche, la tradicional de crema y piñones horneada con un método distinto al común, y otra con crema de chocolate y avellanas y almendras. Las dos versiones quedan deliciosas y son perfectas opciones para disfrutarlas durante la verbena de Sant Joan o en cualquier otro momento del año.
In this video I prepare 2 brioche breads, the traditional one with pastry cream and pine nuts baked with a different method than the common one, and another with hazelnut chocolate spread and almonds. Both versions are delicious and are perfect options to enjoy during the Revetlla de Sant Joan or at any other time of the year.
Ingredientes (para 2 cocas medianas):
100 g de Harina de fuerza (pre fermento)
100 ml de leche tibia (pre fermento)
10 g de levadura seca de panadería (pre fermento)
400 g de Harina de fuerza (coca)
120 ml de leche infusionada con canela y cítricos (coca)
100 g de azúcar (coca)
1 Huevo (coca)
150 g de mantequilla sin sal (coca)
10 g de sal (coca)
20 g de miel (coca)
Lascas de piel de limón y naranja (para la infusión)
1 rama de canela (para la infusión)
250 ml de leche (crema)
50 g de azúcar (crema)
2 yemas (crema)
20 g de almidón de maíz (crema)
30 g de mantequilla sin sal (crema)
1 rama de canela (crema)
Lascas de piel de 1 limón (crema)
1 chorrito de extracto de vainilla (crema)
40 g de piñones (para decorar)
20 g de azúcar (para los piñones)
90 g de crema de chocolate y avellanas
40 g de bastones de almendra
40 g de azúcar humedecido
1 huevo batido (para pintar)
Ingredients (for 2 medium breads):
100 g (3.5 oz) of bread flour (pre-ferment)
100 ml (3.4 fl oz) of lukewarm milk (pre-ferment)
10 g (0.35 oz) instant yeast (pre-ferment)
400 g (14.1 oz) of bread flour (bread)
120 ml (1/2 cup) of cinnamon and citrus infusioned milk (bread)
100 g (1/2 cup) of sugar (bread)
1 ExL Egg (bread)
150 g (11 Tbsp) unsalted butter (bread)
10 g (1/2 Tbsp) of fine salt (bread)
20 g (1 Tbsp) of honey (bread)
Peel of lemon and orange (for infusion)
1 cinnamon stick (for infusion)
250 ml (1 cup) of milk (cream)
50 g (1/4 cup) of sugar (cream)
2 yolks (cream)
20 g (2 Tbsp + 1 tsp) of cornstarch (cream)
30 g (2 Tbsp) of unsalted butter (cream)
1 cinnamon stick (cream)
Peel of 1 lemon (cream)
1 splash of vanilla extract (cream)
40 g (1/3 cup) of pine nuts (to decorate)
20 g (1.5 Tbsp) of sugar (for the pine nuts)
90 g (3.2 oz) chocolate hazelnut spread
40 g (1/3 cup) of silvered almonds
40 g (3 1/4 Tbsp) of moistened sugar
1 beaten egg (for brushing)
