Cock-a-Leekie Soup Recipe
Ingredients:
1 whole chicken
1 large onion, roughly chopped
2 carrots, chopped
3 celery stalks, chopped
2 sprigs of Rosemary
7 cloves of garlic
1.5 bay leaves
1 tablespoon peppercorns
1 tablespoon kosher salt
2 tablespoons butter
2 diced carrots
6-8 leeks, cleaned and sliced
2 teaspoons salt (for sautéing vegetables)
2 teaspoons black pepper
Handful of fresh thyme, tied in a bundle (or in a bouquet garni bag)
Handful of fresh parsley, tied in a bundle (or in a bouquet garni bag)
1 cup cooked barley
Instructions:
In a large pot, place the whole chicken and add enough water to almost cover it.
Add chopped onion, carrots, celery, rosemary, whole garlic cloves, bay leaves, peppercorns, and kosher salt to the pot.
Bring the mixture to a simmer (avoid boiling) and let it cook for about 40 minutes until the chicken is thoroughly cooked.
Strain the broth, reserving the cooked chicken. Remove the meat from the bones and set aside.
In the same pot, melt butter and sauté diced carrots and leeks. Season with salt and black pepper.
Add the bouquet garni of fresh thyme and parsley to the pot.
Sauté for about 10 minutes until the vegetables are fragrant and softened.
Pour in the strained chicken broth and add the pre-cooked barley and diced chicken.
Simmer until all the ingredients are heated through.
Remove the bouquet garni.
Serve the Cock-a-Leekie soup hot, savoring the rich flavors and comforting warmth. Enjoy!
Note: Adjust seasoning to taste and feel free to add more water or broth if needed.
